Creamy Mexican Street Corn Cups are a delicious, easy-to-serve version of Mexican elote (street corn). Sweet corn is mixed with a creamy, tangy sauce, then finished with cheese, lime, and chili for a flavorful side dish or snack.
Ingredients

4 cups corn kernels, fresh or frozen

2 tablespoons butter

½ cup mayonnaise

¼ cup sour cream or Mexican crema

½ cup crumbled cotija or feta cheese

1 clove garlic, minced

1 lime, juiced

½ teaspoon chili powder

¼ teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons chopped cilantro
Method

Heat butter in a large skillet over medium-high heat.

Add the corn and cook for 5–8 minutes, stirring occasionally, until lightly browned.

Reduce the heat and stir in the garlic.

In a bowl, combine mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper.

Add the creamy mixture to the warm corn and stir until evenly coated.

Spoon the corn into small serving cups.

Top with crumbled cotija or feta and chopped cilantro.
