Farmer’s Casserole is a hearty breakfast casserole made with eggs, potatoes, cheese, and breakfast meat. It’s simple, filling, and ideal for preparing ahead of time.

Ingredients

  • 6 large eggs

  • 2 cups frozen hash browns, thawed

  • 1 cup diced ham or cooked sausage

  • 1½ cups shredded cheddar cheese

  • 1 cup milk

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ½ cup diced onion

  • ½ cup diced bell pepper, optional

  • 1 tablespoon butter or cooking spray

Method

  1. Preheat the oven to 350°F (175°C).

  2. Grease a 9×13-inch baking dish.

  3. Spread the hash browns evenly across the bottom.

  4. Add the ham or cooked sausage, onion, and bell pepper.

  5. Sprinkle the shredded cheese over the top.

  6. Whisk the eggs, milk, salt, pepper, and garlic powder together.

  7. Pour the egg mixture evenly over the casserole.

  8. Bake uncovered for 40–50 minutes, until the eggs are set and the top is lightly golden.

  9. Let it rest for 5–10 minutes before slicing.

Serving

Serve warm with toast, fresh fruit, salsa, or avocado. For extra flavor, add green onions, mushrooms, or a little hot sauce.
