Ingredients

For the bowl

  • 2 cups cooked chicken breast, chopped or shredded
  • 3 cups chopped romaine lettuce
  • ½ cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ avocado, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup corn, optional
  • 2 tbsp crumbled feta cheese
  • 1 tbsp fresh parsley or cilantro

Creamy dressing

  • ½ cup Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 1–2 tbsp water, as needed

Instructions

  1. Make the dressing: Whisk together Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, paprika, salt, and pepper. Add a little water until it reaches your preferred consistency.
  2. Prepare the salad: Add lettuce, cucumber, tomatoes, avocado, red onion, corn, and feta to a large bowl.
  3. Add the chicken: Top with the cooked chicken and sprinkle with fresh herbs.
  4. Dress: Drizzle generously with the creamy dressing and toss gently to combine.
  5. Serve: Enjoy immediately, or keep the dressing separate if preparing it for meal prep.

  • Mediterranean: Add olives, feta, cucumber, and oregano.
  • Spicy: Add hot sauce or cayenne to the dressing.
