Oatmeal Cottage Cheese Pancakes
Fluffy, protein-rich pancakes made with oats and cottage cheese. They’re naturally sweet, satisfying, and perfect for breakfast.
Ingredients
- 1 cup rolled oats
- ½ cup cottage cheese
- 2 large eggs
- ½ banana
- ¼ cup milk
- 1 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt
- Butter or oil, for cooking
Instructions
- Blend the batter: Add oats, cottage cheese, eggs, banana, milk, baking powder, vanilla, cinnamon, and salt to a blender. Blend until smooth.
- Rest: Let the batter sit for 5 minutes so the oats can absorb some of the liquid.
- Heat the pan: Lightly grease a nonstick skillet or griddle and heat over medium-low heat.
- Cook: Pour about ¼ cup of batter for each pancake. Cook for 2–3 minutes, until bubbles form and the edges look set.
- Flip: Carefully flip and cook for another 1–2 minutes, until golden brown and cooked through.
- Serve: Stack the pancakes and top with fresh berries, sliced banana, Greek yogurt, peanut butter, or a drizzle of honey or maple syrup.
Tips
- For extra fluffy pancakes, don’t over-blend the batter after adding the baking powder.
- If the batter is too thick, add 1–2 tablespoons of milk.
- You can replace the banana with 1–2 tablespoons of maple syrup or honey if preferred.
- For a smoother texture, blend the oats into flour first.
