Sweet Lemon Glaze

This simple sweet lemon glaze is smooth, glossy, bright, and perfect for drizzling over cakes, muffins, loaf cakes, cookies, cinnamon rolls, pancakes, or pastries.
Ingredients
- 1½ cups (180 g) powdered sugar
- 2–3 tbsp fresh lemon juice
- 1 tsp finely grated lemon zest
- ½ tsp vanilla extract
- Pinch of salt
Instructions
1. Sift the sugar
Place the powdered sugar in a medium bowl.
If it has lumps, sift it first for an extra-smooth glaze.
2. Add the lemon
Add 2 tablespoons of fresh lemon juice and the lemon zest.
Whisk until smooth.
3. Add vanilla and salt
Whisk in the vanilla extract and a tiny pinch of salt.
The salt balances the sweetness and makes the lemon flavor stand out.
4. Adjust the consistency
For a thick drizzle, use less lemon juice.
For a thin glaze, add more lemon juice about ½ teaspoon at a time.
You want the glaze to slowly run from a spoon but still coat the surface of your baked goods.
How to Use It
For loaf cakes
Let the cake cool completely.
Drizzle the glaze slowly back and forth across the top.
Allow it to sit for 15–20 minutes so the glaze can set.
For cookies
Dip the tops of completely cooled cookies directly into the glaze.
Place them on parchment and allow the glaze to harden.
For muffins
Drizzle a small amount over each cooled muffin.
You can add a little extra lemon zest while the glaze is still wet.
For cinnamon rolls
Use a slightly thicker version by starting with only 1½ tablespoons lemon juice.
Drizzle over warm—not piping-hot—cinnamon rolls.
Extra-Lemony Glaze
For a stronger lemon flavor, use:
- 1½ cups powdered sugar
- 3 tbsp lemon juice
- 1½ tsp lemon zest
- ½ tsp vanilla
- Pinch of salt
For an especially vibrant flavor, add ¼ tsp lemon extract.
Creamy Lemon Glaze
For a richer glaze, replace 1 tablespoon of lemon juice with 1 tablespoon heavy cream.
This produces a softer, creamier finish while keeping the lemon flavor.
Thick Lemon Icing
For a spreadable icing, start with:
- 1½ cups powdered sugar
- 1½ tbsp lemon juice
- 1 tbsp softened butter
- ½ tsp vanilla
Beat until smooth.
Add lemon juice a few drops at a time until you reach the desired consistency.
Tips
- Use fresh lemon juice rather than bottled for the brightest flavor.
- Make sure your baked goods are completely cool before applying a thin glaze.
- If the glaze becomes too thin, whisk in more powdered sugar.
- If it’s too thick, add lemon juice a few drops at a time.
- For a beautiful finish, drizzle with a spoon or use a small piping bag.
Storage
Keep leftover glaze covered in the refrigerator for up to 5 days.
Let it sit at room temperature and whisk again before using. If it has thickened too much, add a few drops of lemon juice.

This glaze is especially delicious on lemon blueberry loaf, pound cake, blueberry muffins, scones, sugar cookies, cinnamon rolls, and lemon poppy-seed cake.
