Flaky puff pastry, savory seasoned beef, and plenty of melted cheese come together in this incredibly easy 4-ingredient beef and cheese pastry. It’s perfect for a quick dinner, party appetizer, lunchbox, or satisfying snack.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 sheet puff pastry, thawed
  • 1 cup (100 g) shredded cheddar cheese
  • 1 egg, beaten

Optional

  • Salt and black pepper
  • Sesame seeds or everything seasoning for topping
  • Ketchup or mustard for dipping

Instructions

1. Cook the beef

Heat a large skillet over medium-high heat.

Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon, until completely browned.

Season lightly with salt and pepper if desired.

Drain any excess grease.

Transfer the beef to a bowl and let it cool for about 5–10 minutes.

Important: The beef shouldn’t be piping hot when it goes into the pastry.

2. Prepare the pastry

Preheat the oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Place the thawed puff pastry on a lightly floured surface.

Gently roll it out to smooth any creases.

Cut the pastry into 6–8 rectangles or squares.

3. Add the filling

Place approximately 2 tablespoons of cooked beef in the center of each pastry piece.

Top with a generous tablespoon of shredded cheddar.

Don’t overfill—the pastry needs enough room to seal properly.

4. Fold and seal

Fold the pastry over the filling to create a pocket or triangle.

Press the edges together firmly with your fingers.

Use a fork to crimp the edges, creating a secure seal.

5. Brush with egg

Transfer the pastries to the prepared baking sheet.

Brush the tops generously with beaten egg.

If desired, sprinkle with sesame seeds or everything seasoning.

Cut a tiny slit in the top of each pastry to allow steam to escape.

Bake

6. Bake until golden

Bake for 25–30 minutes, or until the pastry is puffed and deeply golden brown.

If you’re making smaller pastries, start checking around 20 minutes.

7. Rest

Remove from the oven and let the pastries rest for 5 minutes before serving.

The cheese and beef filling will be extremely hot straight from the oven.

Easy Variations

Cheddar & Onion

Cook ½ finely diced onion with the beef.

Although this adds a fifth ingredient, it gives the filling a delicious caramelized flavor.

Cheeseburger Pastry

Add a little mustard and ketchup to the cooked beef before filling the pastry.

Serve with burger sauce for dipping.

Spicy Beef & Cheese

Add crushed red pepper flakes or a little hot sauce to the beef.

Add 1 minced garlic clove while browning the beef.

Tips for Flaky Pastry

  • Keep the puff pastry cold. If it becomes soft or sticky, refrigerate it for 10–15 minutes.
  • Cool the beef before filling. Hot filling can melt the butter in the pastry prematurely.
  • Don’t overfill. Too much filling makes the pastry difficult to seal.
  • Seal firmly. Crimp the edges with a fork to prevent cheese from escaping.
  • Use a fully preheated oven. Puff pastry needs strong initial heat to rise properly.
  • Don’t open the oven repeatedly. The temperature drop can interfere with puffing.

Make Ahead

Cook the beef up to 2 days ahead and refrigerate it in a sealed container.

When ready to bake, assemble the pastries with the chilled beef and cheese.

You can also assemble the pastries several hours ahead and refrigerate them until you’re ready to bake.

Brush with egg immediately before baking.

Freezer Instructions

Assemble the unbaked pastries and place them on a parchment-lined tray.

Freeze until firm, then transfer to a freezer-safe container.
