🥒 Classic Cucumber Tea Sandwiches

Delicate, refreshing, and wonderfully simple, classic cucumber tea sandwiches are made with thinly sliced cucumber, creamy seasoned spread, and soft bread. They’re perfect for afternoon tea, brunches, showers, picnics, or a light lunch.

Ingredients

Makes about 24 small tea sandwiches.

  • 1 large English cucumber

  • 1 loaf soft white sandwich bread or brioche

  • 8 oz (225 g) cream cheese, softened

  • 2 tablespoons unsalted butter, softened

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon fresh dill, finely chopped

  • 1 tablespoon fresh chives, finely chopped

  • ¼ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Instructions

1. Prepare the cucumber

Wash and dry the cucumber.

Using a sharp knife or mandoline, slice it very thinly.

You want delicate slices rather than thick, crunchy chunks.

Place the cucumber slices on a layer of paper towels.

Sprinkle very lightly with salt and let them sit for about 10–15 minutes.

This draws out excess moisture and prevents your sandwiches from becoming soggy.

Pat the cucumber thoroughly dry with additional paper towels.

2. Make the cream cheese spread

In a bowl, combine the softened cream cheese and butter.

Beat or stir until smooth and creamy.

Add:

  • Lemon juice

  • Dill

  • Chives

  • Garlic powder

  • Salt

  • Black pepper

Mix until everything is evenly incorporated.

Taste and adjust the seasoning if necessary.

3. Prepare the bread

Lay the bread slices on a clean work surface.

For traditional tea sandwiches, you can carefully cut off the crusts.

This gives the sandwiches their classic delicate appearance.

Spread a thin, even layer of the cream cheese mixture over each slice.

Don’t spread it too thick—the cucumber should remain the star of the sandwich.

4. Add the cucumber

Arrange a single layer of cucumber slices over half of the bread slices.

Slightly overlap the slices so every bite gets plenty of cucumber.

Place another slice of bread on top, cream-cheese side down.

Press very gently.

5. Cut the sandwiches

Using a sharp serrated knife, cut each sandwich into:

  • Triangles

  • Small rectangles

  • Squares

For a traditional afternoon-tea presentation, triangles are especially pretty.

Wipe the knife between cuts for cleaner edges.

6. Serve

Arrange the sandwiches on a serving platter.

If you’re not serving them immediately, cover them loosely with slightly damp paper towels and then plastic wrap.

Refrigerate until ready to serve.

For the best texture, serve within a few hours.

🌿 Easy Variations

Classic English Style

Keep it simple with butter, cucumber, salt, and white bread. This is the most traditional version.

Smoked Salmon

Add a thin layer of smoked salmon underneath the cucumber.

Mint Cucumber

Replace the dill with finely chopped fresh mint for a particularly refreshing version.

Everything-Bagel Style

Add a little everything-bagel seasoning to the cream cheese.

Extra-Lemony

Add more fresh lemon zest and lemon juice to the spread for a bright flavor.

🥪 Tips for Perfect Tea Sandwiches

  • Use English cucumbers because they have fewer seeds and less excess water.

  • Slice the cucumber as thinly as possible.

  • Don’t skip drying the cucumber—this is the key to avoiding soggy sandwiches.

  • Use very soft, fresh bread.

  • Keep the cream cheese at room temperature so it’s easy to spread without tearing the bread.

  • Don’t assemble them too far in advance.

  • For an elegant presentation, garnish the platter with fresh dill, chives, or small cucumber slices.

☕ Serving Suggestion

Serve these alongside black tea, Earl Grey, or English Breakfast tea, with scones, small pastries, and fresh fruit for a classic afternoon-tea spread.
