Sweet Alabama Pecan Bread is a soft, moist, sweet Southern-style quick bread made with pecans, sugar, eggs, and vanilla. It has a rich, buttery flavor and a slightly crisp, caramelized top.
Ingredients

2 cups all-purpose flour

1½ cups granulated sugar

1 cup chopped pecans

1 cup vegetable oil or melted butter

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon salt

Optional: ½ cup shredded coconut
Method

Preheat the oven to 350°F (175°C).

Grease a 9×13-inch baking pan.

Whisk together the eggs, sugar, oil/butter, and vanilla.

Add flour, baking powder, and salt. Mix until just combined.

Fold in the chopped pecans and coconut if using.

Pour the batter into the prepared pan.

Bake for about 30–40 minutes, until golden and a toothpick inserted in the center comes out mostly clean.

Let it cool before slicing.
Serving
Serve warm or at room temperature. It is especially good with butter, vanilla ice cream, or a drizzle of caramel sauce.
