These easy homemade drop biscuits are soft and tender inside with lightly golden edges. No rolling or cutting is needed—the dough is simply scooped onto a baking sheet.

Ingredients

  • 2 cups (250 g) all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon sugar, optional

  • ½ cup (115 g) cold butter, cut into small pieces

  • ¾ cup (180 ml) cold milk

  • 1 tablespoon melted butter, for brushing

Method

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Whisk together the flour, baking powder, salt, and sugar.

  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingertips until it resembles coarse crumbs.

  4. Pour in the cold milk and gently stir just until a soft, slightly sticky dough forms. Don’t overmix.

  5. Drop large spoonfuls of dough onto the prepared baking sheet, leaving a little space between each biscuit.

  6. Brush the tops with melted butter.

  7. Bake for 12–15 minutes, until puffed and golden brown.

  8. Brush with a little more butter while they’re hot, if desired.

Tips for Fluffy Biscuits

  • Keep the butter and milk cold.

  • Don’t knead the dough.

  • Don’t overmix after adding the milk.

  • For extra-tender biscuits, avoid packing the flour tightly when measuring.

Serving Ideas

Serve warm with butter, honey, jam, sausage gravy, scrambled eggs, or fried chicken.
