Ingredients
For the soup

- 1 tsp brown sugar (optional, to balance the tomatoes)
- 2 tbsp fresh parsley, chopped

Instructions
1. Brown the beef
Place a large heavy-bottomed pot or Dutch oven over medium-high heat.
Add the ground beef and cook for about 5â7 minutes, breaking it apart with a wooden spoon.
Continue cooking until the beef is browned and no longer pink.
If there is a large amount of excess fat, carefully drain some of it.
2. Cook the onion and peppers
Add the diced onion and bell peppers to the pot.
Cook for about 5â6 minutes, stirring occasionally, until the vegetables begin to soften.
The peppers don’t need to be completely tender yet because they’ll continue cooking in the soup.
3. Add the garlic
Stir in the minced garlic.
Cook for about 30â60 seconds, just until fragrant.
Don’t cook the garlic too long or it can become bitter.
4. Add the tomato paste and seasonings
Stir in:
- Tomato paste
- Italian seasoning
- Paprika
- Smoked paprika
- Salt
- Black pepper
Cook for approximately 1 minute.
This brief cooking time helps develop the flavor of the tomato paste and spices.
5. Add the tomatoes and broth
Pour in the diced tomatoes and tomato sauce.
Add the beef broth and Worcestershire sauce if using.
Stir everything together, scraping the bottom of the pot to loosen any browned bits.

6. Simmer the soup
Bring the soup to a gentle boil.
Once it starts bubbling, reduce the heat to medium-low.
Cover partially and simmer for about 20â25 minutes.
Stir occasionally.
The peppers should become tender and the flavors should have time to blend.
7. Add the rice
Stir in 1 cup of cooked rice.
Simmer for another 5 minutes.
Using already-cooked rice is important because uncooked rice can absorb a large amount of broth and make the soup too thick.
If the soup becomes thicker than you’d like, add another ½â1 cup of beef broth.
8. Taste and adjust
Taste the soup carefully.
Adjust with additional:
- Salt
- Black pepper
- Italian seasoning
- Worcestershire sauce
If the tomatoes taste particularly acidic, add ½â1 teaspoon brown sugar.
