These no-bake chocolate crunch bars are rich, crispy, chewy, and wonderfully chocolatey. They come together without an oven, making them perfect when you want an easy dessert with minimal effort. Ingredients

For the chocolate crunch mixture

  • 2 cups (340 g) semi-sweet chocolate chips
  • ½ cup (125 g) creamy peanut butter
  • 2 tbsp unsalted butter
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Âź tsp salt
  • 3 cups (about 75 g) crispy rice cereal
  • ½ cup (60 g) roasted chopped peanuts (optional)

For the topping

  • ½ cup (85 g) semi-sweet or dark chocolate chips
  • 1 tsp coconut oil (optional)
  • Flaky sea salt (optional)

Instructions

1. Prepare the pan

Line an 8 × 8-inch (20 × 20 cm) square baking pan with parchment paper.

Leave a little parchment hanging over two sides. This will make it much easier to lift the finished bars from the pan.

Lightly grease the parchment if desired.

2. Melt the chocolate mixture

Place the chocolate chips, peanut butter, and butter in a microwave-safe bowl.

Microwave for 20–30 seconds at a time, stirring thoroughly after each interval.

Continue until the mixture is mostly melted.

Stir until completely smooth.

You can also melt everything in a heatproof bowl over a saucepan of gently simmering water.

3. Add the flavorings

Once smooth, stir in the honey or maple syrup, vanilla extract, and salt.

Mix until completely incorporated.

The mixture should be glossy and smooth.

4. Add the crunchy cereal

Pour the crispy rice cereal into the chocolate mixture.

If you’re using chopped peanuts, add them now as well.

Using a large spatula, gently fold everything together until the cereal is evenly coated.

Don’t stir too aggressively, or you’ll crush the cereal and lose that satisfying crunch.

5. Transfer to the pan

Pour the mixture into your prepared pan.

Use the back of a spatula or the bottom of a measuring cup to gently press the mixture into an even layer.

Press firmly enough to hold the bars together, but don’t compact them excessively or they’ll become too dense.

6. Make the chocolate topping

Melt the additional chocolate chips with the coconut oil.

Microwave in 15–20 second intervals, stirring after each one, until smooth.

Pour the melted chocolate over the top of the crunch mixture.

Spread it into an even layer with a spatula.

7. Add a finishing touch

While the chocolate topping is still soft, sprinkle a tiny amount of flaky sea salt over the surface.

You can also add:

  • Chopped peanuts
  • Mini chocolate chips
  • Shredded coconut
  • Crushed pretzels

8. Chill

Place the pan in the refrigerator for 1–2 hours, or until the bars are completely firm.

For a firmer texture, you can chill them overnight.

9. Slice

Lift the entire slab from the pan using the parchment paper.

Place it on a cutting board.

Allow it to sit at room temperature for about 5 minutes, then use a sharp knife to cut it into 16 squares or bars.

For cleaner cuts, warm the knife under hot water, dry it thoroughly, and then slice.

Don’t overheat the chocolate

Chocolate can become thick or grainy when overheated. Short microwave intervals and frequent stirring are the safest approach.

Keep the cereal crunchy

Make sure the chocolate mixture isn’t extremely hot when you add the cereal. Very hot chocolate can soften the cereal.

Don’t crush the cereal

Fold gently rather than stirring aggressively.

Press evenly

An even layer means every bar will have the same thickness and will hold together better.

Chill completely
