This Strawberry Icebox Cake is a creamy, dreamy no-bake dessert made with layers of sweet strawberries, fluffy whipped cream, and tender cookies or graham crackers. As it chills, the cookies soften into a cake-like texture while the strawberries add bright, fresh flavor.

It’s incredibly easy to make and perfect for summer gatherings, birthdays, potlucks, or whenever you want an impressive dessert without turning on the oven.

Ingredients

For the strawberry filling

  • 1½ lbs (680 g) fresh strawberries
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

For the whipped cream

  • 2 cups (480 ml) heavy whipping cream, cold
  • ½ cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened, optional for a thicker filling

For the layers

  • 24–30 graham crackers, vanilla wafers, or shortbread cookies
  • ½ cup strawberry jam, optional
  • Extra strawberries, for decorating

Instructions

  1. Prepare the strawberries.
    Wash and dry the strawberries thoroughly. Remove the stems and slice the berries into thin pieces.

    Place them in a bowl with the granulated sugar, vanilla, and lemon juice. Gently toss and let them sit for 10–15 minutes. This allows the strawberries to release some of their juices and become extra flavorful.

  2. Make the whipped cream.
    Pour the cold heavy cream into a large mixing bowl. Add the powdered sugar and vanilla.

    Beat with an electric mixer on medium-high speed until the cream forms soft to medium peaks.

  3. Make it extra creamy.
    If using cream cheese, beat it separately until smooth. Gently fold the whipped cream into the cream cheese until you have a thick, fluffy mixture.

    This version holds its layers particularly well and gives the dessert a cheesecake-like flavor.

  4. Prepare the pan.
    Line an 8×8-inch or 9×9-inch baking dish with parchment paper if you want to lift the cake out later. You can also make it directly in the dish and serve it from there.
  5. Create the first layer.
    Arrange a layer of graham crackers or cookies across the bottom of the dish. Break a few pieces if necessary to fill the gaps.
  6. Add strawberry jam.
    If using jam, spread a very thin layer over the cookies. This is optional but gives the dessert an extra burst of strawberry flavor.
  7. Add the cream.
    Spread approximately one-third of the whipped cream mixture over the cookies.
  8. Add strawberries.
    Arrange a layer of sliced strawberries over the cream.
  9. Repeat the layers.
    Continue layering:

    Cookies → cream → strawberries

    Repeat until you’ve used all the ingredients, finishing with a layer of whipped cream.

  10. Decorate.
    Arrange halved or sliced strawberries over the top. You can also add crushed cookies, white chocolate shavings, or a drizzle of strawberry sauce.
  11. Chill.
    Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.

    This is the most important step. The cookies need time to absorb moisture from the cream and transform into a soft, cake-like texture.

  12. Slice and serve.
    Once thoroughly chilled, cut the icebox cake into squares and serve cold.

Tips for the Best Strawberry Icebox Cake

  • Chill overnight if possible. The longer it rests, the softer and more cake-like the cookies become.
  • Use strawberries that are ripe but still firm. Very watery berries can make the dessert soggy.
  • Pat the strawberries dry after washing them.
  • Keep the whipped cream cold while preparing it.
  • Don’t slice the strawberries too thickly; thin slices make the layers easier to cut.
  • For a stronger strawberry flavor, add strawberry jam between the layers.
  • For an elegant finish, reserve the prettiest strawberries for decorating the top.

Easy Variations

Strawberry Cheesecake Icebox Cake:
Use cream cheese in the whipped filling and add crushed graham crackers between the layers.

Chocolate Strawberry:
Use chocolate wafer cookies and add chocolate shavings to each layer.

Strawberry Shortcake:
Use vanilla wafer cookies and add a little extra vanilla to the whipped cream.

Lemon Strawberry:
Add 1–2 teaspoons of fresh lemon zest to the whipped cream and use extra lemon juice with the strawberries.

White Chocolate Strawberry:
Fold finely chopped white chocolate into the cream and decorate the top with white chocolate curls.

Make-Ahead

This dessert is ideal for making ahead. Prepare it the day before serving, cover tightly, and refrigerate overnight.

For the prettiest slices, chill it overnight and use a sharp knife wiped clean between cuts.

Storage

Keep the icebox cake refrigerated and enjoy it within 2–3 days. The longer it sits, the softer the cookies become, so the texture is best during the first couple of days.
