This Air-Fried Crispy Cauliflower is golden, crunchy on the outside, tender in the middle, and loaded with savory seasoning. It’s a quick and healthier alternative to deep-fried cauliflower, and it makes a fantastic snack, side dish, or appetizer.

Ingredients

For the cauliflower

  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • ½ cup (60 g) all-purpose flour
  • ½ cup (60 g) cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper, optional
  • ½ cup (120 ml) cold water
  • ½ cup (50 g) panko breadcrumbs

  • Ranch dressing

Instructions

  1. Prepare the cauliflower.
    Wash the cauliflower and cut it into small, evenly sized florets. Pat them thoroughly dry with a clean kitchen towel.

    Removing excess moisture is important because dry cauliflower develops a much crispier coating in the air fryer.

  2. Preheat the air fryer.
    Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.
  3. Make the coating.
    In a large bowl, whisk together the flour, cornstarch, garlic powder, paprika, onion powder, salt, black pepper, oregano, and cayenne pepper.
  4. Add the water.
    Slowly whisk in the cold water until you have a smooth, thick batter. It should be thick enough to coat the cauliflower without being overly heavy.
  5. Coat the cauliflower.
    Add the cauliflower florets to the batter and toss until each piece is evenly coated.
  6. Add the panko.
    Place the panko breadcrumbs in a separate bowl. Take each battered cauliflower floret and gently press it into the breadcrumbs.

    Make sure the panko sticks well—this is what gives the cauliflower its extra-crispy exterior.

  7. Air fry.
    Lightly spray the air-fryer basket with cooking spray. Arrange the cauliflower in a single layer, leaving space between the pieces.

    Lightly spray the tops with oil.

  8. Cook until golden.
    Air fry at 400°F (200°C) for 12–16 minutes, shaking the basket or turning the cauliflower halfway through.

    Depending on your air fryer and the size of the florets, you may need another 2–4 minutes for deeper browning.

  9. Finish and serve.
    Once the cauliflower is golden brown and crisp, transfer it to a serving bowl. Finish with fresh parsley, Parmesan, a squeeze of lemon, or your favorite sauce.

Tips for Extra-Crispy Cauliflower

  • Dry the cauliflower well. Moisture is the enemy of crispiness.
  • Don’t overcrowd the air fryer. Cook in batches if necessary.
  • Cornstarch is key for creating a light, crunchy crust.
  • Use cold water in the batter for a crispier coating.
  • Spray the coated cauliflower lightly with oil before cooking.
  • Shake or turn the cauliflower halfway through cooking so it browns evenly.
  • Serve immediately. Like most crispy foods, it softens as it sits.

Flavor Variations

Buffalo Cauliflower:
After air frying, toss the cauliflower with buffalo sauce and serve with ranch or blue cheese dressing.

Parmesan Garlic:
Add extra garlic powder to the coating and toss the finished cauliflower with grated Parmesan and fresh parsley.

Spicy Chili:
Add cayenne, chili powder, and a pinch of smoked paprika to the batter. Finish with hot honey.

Honey Garlic:
Toss the crispy cauliflower with a mixture of honey, minced garlic, soy sauce, and a little chili sauce.

Lemon Herb:
Skip the cayenne and finish the cauliflower with lemon zest, lemon juice, parsley, and Parmesan.
