These No-Bake Homemade Chocolate Coconut Bars are rich, chewy, creamy, and packed with coconut flavor. A soft, sweet coconut center is pressed into a pan and covered with a smooth layer of chocolate, creating an easy homemade treat without turning on the oven.
They’re perfect for satisfying a chocolate craving, holiday cookie trays, lunchbox treats, or make-ahead desserts.
Ingredients
For the coconut layer
- 3 cups (240 g) unsweetened shredded coconut
- 1 cup (240 g) sweetened condensed milk
- ½ cup (120 g) creamy coconut milk or heavy cream
- 2 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons powdered sugar, optional, for extra sweetness
For the chocolate topping
- 1½ cups (255 g) semi-sweet or milk chocolate chips
- 2 tablespoons creamy coconut oil
- ½ teaspoon vanilla extract, optional
- ¼ cup toasted shredded coconut, optional, for topping
Instructions
- Prepare the pan.
Line an 8×8-inch baking pan with parchment paper, leaving some paper hanging over the sides. This makes it much easier to lift out the finished bars. - Make the coconut mixture.
In a large bowl, combine the shredded coconut, sweetened condensed milk, coconut milk or heavy cream, melted butter, vanilla, and salt.Stir thoroughly until the coconut is evenly coated and the mixture becomes thick and sticky.
- Adjust the texture.
The mixture should be moist enough to hold together when pressed but not runny. If it seems too wet, add a little more shredded coconut, 1 tablespoon at a time.If it seems too dry, add another tablespoon of condensed milk.
- Press into the pan.
Transfer the coconut mixture to the prepared pan. Use a spatula or the bottom of a measuring cup to press it down firmly and evenly.Take your time with this step. A firmly packed coconut layer will produce bars that hold together beautifully when sliced.
- Chill the coconut layer.
Refrigerate for 30–45 minutes, or until firm.
Make the Chocolate Topping
- Melt the chocolate.
Place the chocolate chips and coconut oil in a microwave-safe bowl.Microwave in 20–30 second intervals, stirring thoroughly after each interval, until completely smooth.
Alternatively, melt the chocolate gently over a double boiler.
- Add vanilla.
Stir in the vanilla extract if using. - Cover the coconut layer.
Remove the chilled coconut mixture from the refrigerator and pour the melted chocolate over the top.Spread the chocolate into an even layer using a spatula.
- Add coconut.
Sprinkle toasted shredded coconut over the chocolate while it’s still melted. You can also leave the top completely smooth or sprinkle it with flaky sea salt. - Chill again.
Refrigerate for 1–2 hours, or until the chocolate is completely firm. - Cut into bars.
Use the parchment paper to lift the entire slab from the pan. Let it sit at room temperature for about 5–10 minutes, then use a sharp knife to cut it into squares or rectangles.
Tips for Perfect Coconut Bars
- Pack the coconut mixture firmly into the pan so the bars don’t crumble.
- If using unsweetened coconut, the condensed milk provides most of the sweetness.
- For a smoother chocolate topping, add a little coconut oil when melting the chocolate.
- Let the chocolate set completely before cutting.
- For clean slices, run your knife under hot water, dry it thoroughly, and then cut the bars.
- Don’t use too much liquid in the coconut layer—the mixture should be thick and moldable.
Toasted Coconut Option
For a deeper coconut flavor, toast the shredded coconut before adding it to the mixture.
Place the coconut in a dry skillet over medium-low heat and stir frequently for 3–5 minutes, until lightly golden and fragrant.
