This classic Old-Fashioned Holiday Fruit Cake is rich, moist, warmly spiced, and packed with dried fruit, nuts, and a touch of citrus. It’s the kind of traditional holiday cake that tastes even better after resting for a day or two.

Ingredients

For the Fruit Mixture

  • 2 cups mixed dried fruit

  • 1 cup raisins

  • ½ cup chopped dates

  • ½ cup candied cherries

  • ½ cup candied orange peel, chopped

  • ½ cup chopped dried apricots

  • ¾ cup orange juice

  • ¼ cup lemon juice

For the Cake

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon ground cloves

  • ½ teaspoon ground ginger

  • ½ teaspoon salt

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon orange zest

  • ½ cup molasses

  • ½ cup chopped walnuts or pecans

Instructions

1. Soak the Fruit

Place the dried fruit, raisins, dates, cherries, orange peel, and apricots in a saucepan.

Pour in the orange juice and lemon juice.

Warm over low heat for about 5 minutes, stirring occasionally. Don’t boil the mixture.

Remove from the heat and let it cool.

For an even richer fruit cake, cover the fruit mixture and let it soak overnight in the refrigerator.

2. Prepare the Oven

Preheat your oven to 325°F (165°C).

Grease a 9-inch round cake pan or a deep 8-inch square pan.

Line the bottom and sides with parchment paper.

3. Mix the Dry Ingredients

In a medium bowl, whisk together:

Transfer the batter to the prepared cake pan.

Spread the top evenly with a spatula.

Gently tap the pan on the counter a couple of times to remove large air pockets.

7. Bake

Bake for approximately 1 hour 45 minutes to 2 hours 15 minutes, depending on the size and depth of your pan.

The cake is ready when a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.

If the top begins to brown too quickly, loosely cover it with aluminum foil during the final part of baking.

8. Cool Completely

Allow the cake to cool in the pan for about 20–30 minutes.

Remove it from the pan and place it on a wire rack.

Let it cool completely before slicing.

For an extra-moist traditional fruit cake, brush the cooled cake lightly with orange juice every day or two while it rests.

Wrap the cake tightly in parchment paper and then foil.
