These homemade coconut Bounty bars have a soft, sweet, chewy coconut center wrapped in a smooth chocolate coating. They’re completely no-bake, easy to prepare, and perfect for keeping in the refrigerator for a quick treat.

Ingredients

Coconut Filling

  • 2½ cups (200 g) unsweetened shredded coconut
  • 1 cup (300 g) sweetened condensed milk
  • 1 tsp vanilla extract
  • Pinch of salt

Chocolate Coating

  • 8 oz (225 g) milk chocolate or dark chocolate, chopped
  • 1 tsp coconut oil, optional

Optional

  • ½ tsp coconut extract
  • 2 tbsp toasted coconut
  • Flaky sea salt

Instructions

1. Make the coconut filling

Add the shredded coconut, sweetened condensed milk, vanilla extract, and salt to a large bowl.

Stir thoroughly until the coconut is completely coated and the mixture becomes thick and sticky.

If the mixture seems too wet, add another 1–2 tablespoons of shredded coconut.

2. Shape the filling

Line an 8×8-inch (20×20 cm) square pan with parchment paper, leaving some paper hanging over the sides.

Transfer the coconut mixture to the pan.

Press it firmly into an even layer about ¾-inch thick.

Use the back of a spoon or the bottom of a measuring cup to compact it.

3. Chill

Refrigerate for at least 1 hour, or freeze for approximately 30–40 minutes, until the coconut mixture is firm.

4. Cut into bars

Lift the chilled coconut slab out using the parchment paper.

Place it on a cutting board and cut into 12–14 rectangular bars.

If the bars feel soft, return them to the refrigerator for another 15–20 minutes.

Make the Chocolate Coating

5. Melt the chocolate

Place the chocolate in a microwave-safe bowl.

Heat in 20–30 second intervals, stirring well after each interval.

Continue until the chocolate is completely smooth.

Stir in the coconut oil if using.

You can also melt the chocolate gently over a double boiler.

6. Coat the bars

Using two forks, carefully dip each chilled coconut bar into the melted chocolate.

Turn it gently to coat all sides.

Allow excess chocolate to drip back into the bowl.

Place the coated bars on a parchment-lined tray.

7. Add the classic finish

While the chocolate is still soft, use a fork to make 2–3 shallow lines across the top of each bar.

For a slightly more sophisticated version, sprinkle a tiny amount of flaky sea salt over the chocolate.

8. Chill again

Refrigerate the bars for 30–60 minutes, or until the chocolate is completely firm.

Easier Layered Version

If you don’t want to dip individual bars:

  1. Press the coconut mixture into the lined pan.
  2. Chill until firm.
  3. Melt the chocolate.
  4. Pour the chocolate over the coconut layer.
  5. Spread evenly.
  6. Chill until set.
  7. Cut into squares or bars.

This method is faster and creates neat chocolate-and-coconut layers.

Dark Chocolate Bounty Bars

Use 70–85% dark chocolate for the coating.

The slightly bitter chocolate works especially well with the sweet coconut filling.

Add a small pinch of flaky sea salt before the chocolate sets.

Extra-Coconut Version

For a stronger coconut flavor, add:

  • ½ tsp coconut extract
  • 2 tbsp toasted shredded coconut

You can also sprinkle toasted coconut over the chocolate coating before it hardens.

Almond Coconut Bars

Press one whole roasted almond into the center of each coconut bar before dipping them in chocolate.

This creates an almond-coconut version with a satisfying nutty crunch.

Vegan Version

Use:

  • Dairy-free sweetened condensed coconut milk
  • Unsweetened shredded coconut
  • Dairy-free dark chocolate

Follow the same preparation method.
