These crispy air fryer potato slices are golden and crunchy on the outside, tender and fluffy in the middle, and incredibly easy to make. They’re perfect as a snack, side dish, or a crispy alternative to fries.Servings: 3–4

Ingredients

  • 3 medium russet or Yukon Gold potatoes
  • 1½ tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt, plus more to taste
  • Âź tsp black pepper
  • ½ tsp Italian seasoning (optional)
  • 2 tbsp grated Parmesan (optional)
  • Fresh parsley, for serving (optional)

Instructions

1. Choose and prepare the potatoes

For the crispiest results, use russet potatoes because they contain more starch and less moisture.

Wash and scrub the potatoes thoroughly. You can peel them if you prefer, but leaving the skin on gives the slices extra texture and flavor.

Cut the potatoes into slices approximately ⅛–¼ inch (3–6 mm) thick.

Try to keep the slices as even as possible so they cook at the same rate.

2. Soak the potato slices

Place the sliced potatoes in a large bowl of cold water.

Let them soak for about 15–20 minutes.

This helps remove excess surface starch, which is one of the secrets to getting crispier potatoes.

3. Dry them extremely well

Drain the potatoes and spread them onto a clean kitchen towel or paper towels.

Pat them thoroughly dry.

This step is important. Excess water creates steam in the air fryer and can prevent the potatoes from becoming properly crispy.

4. Season the potatoes

Place the dry potato slices in a clean bowl.

Add the olive oil, garlic powder, paprika, onion powder, salt, pepper, and Italian seasoning if using.

If you’re using Parmesan, it’s usually better to add it later so it doesn’t burn.

5. Preheat the air fryer

Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.

6. Arrange the potatoes

Place the potato slices in the air fryer basket in a single layer.

Try not to overlap them.

If you have a lot of potatoes, cook them in batches. Overcrowding traps moisture and results in softer potatoes.

7. Air fry

Cook at 400°F (200°C) for about 15–20 minutes.

After approximately 8 minutes, open the basket and flip the slices.

Continue cooking until they are golden brown and crispy.

Thinner slices may finish sooner, while thicker slices can take a few extra minutes.

8. Add Parmesan

If using Parmesan, sprinkle it over the potatoes during the last 2–3 minutes of cooking.

Return them to the air fryer until the cheese becomes golden and crisp.

9. Serve immediately

Transfer the potato slices to a serving plate.

Sprinkle with a little extra salt and fresh parsley if desired.

They’re best eaten straight from the air fryer, while they’re at their crispiest.
