Instructions
- Make the crepe batter.
In a large bowl, whisk together the flour, sugar, and salt.In a separate bowl, whisk the eggs, milk, melted butter, and vanilla until smooth.
- Combine the mixtures.
Slowly pour the wet ingredients into the dry ingredients while whisking continuously. Continue whisking until you have a smooth, thin batter. If the batter seems too thick, add water 1 tablespoon at a time until it has a pourable consistency similar to heavy cream.
- Rest the batter.
Cover the bowl and let the batter rest for 20–30 minutes. This allows the flour to hydrate and helps produce softer, more delicate crepes. - Cook the crepes.
Heat a nonstick skillet over medium heat and lightly grease it with butter.Pour about ¼ cup of batter into the center of the pan. Immediately tilt and swirl the pan so the batter spreads into a thin, even circle.
- Flip.
Cook for approximately 45–60 seconds, until the edges look dry and the bottom is lightly golden. Flip carefully and cook the other side for another 15–30 seconds. - Repeat.
Transfer the finished crepe to a plate and continue cooking the remaining batter. Stack the crepes on top of one another to keep them soft.
Make the Filling
- Beat the cream cheese.
Add the softened cream cheese and powdered sugar to a bowl. Beat until smooth and creamy. - Add vanilla and cream.
Mix in the vanilla. Slowly add the heavy cream while beating until the filling becomes light and fluffy.Add honey if you want a little extra sweetness.
Assemble the Crepe Rolls
- Spread the filling.
Place one crepe flat on a clean surface. Spread a thin, even layer of the cream cheese filling over the entire crepe, leaving a small border around the edges. - Add fruit or other fillings.
Arrange thinly sliced strawberries, bananas, or other fruit in a line near one edge. You can also drizzle over a little Nutella or caramel. - Roll tightly.
Starting from the filled edge, gently roll the crepe into a tight cylinder.Try not to press too hard, or the filling may squeeze out.
- Chill if desired.
Place the finished rolls seam-side down and refrigerate for 20–30 minutes. This helps the filling firm up and makes the rolls easier to slice. - Slice and serve.
Cut each roll into smaller pieces or serve whole. Dust with powdered sugar and drizzle with chocolate or caramel sauce.

Tips for Perfect Crepe Rolls
- Keep the batter thin so the crepes remain flexible enough to roll.
- Don’t cook the crepes until they’re crispy—the edges should be lightly golden while the center remains soft.
- A nonstick pan makes flipping much easier.
- If your first crepe isn’t perfect, don’t worry. It’s often the “test crepe” that helps you adjust the pan temperature.
- Let the crepes cool slightly before adding a cream-based filling.
- Don’t overfill them, especially if you’re planning to slice them into neat rolls.
- For clean slices, chill the completed rolls before cutting.
Storage
Keep filled crepe rolls covered in the refrigerator for up to 2 days. If using fresh fruit, they’re best eaten within 24 hours because the fruit can release moisture into the filling.
For the best presentation, add powdered sugar, chocolate drizzle, or other toppings just before serving.
Makes
Approximately 10–12 crepes, depending on the size of your pan.
For a dessert-style presentation, arrange the sliced rolls on a platter, drizzle them with melted chocolate, add fresh berries, and finish with a light dusting of powdered sugar.
