Baked Jalapeño Popper Pinwheels

These Baked Jalapeño Popper Pinwheels are crispy, flaky, creamy, cheesy, and packed with just the right amount of jalapeño heat. They combine everything you love about jalapeño poppers—cream cheese, melted cheddar, spicy peppers, and savory bacon—inside golden puff pastry.

They’re perfect for parties, game days, appetizers, snacks, or an easy addition to a holiday spread.

Ingredients

For the pinwheels

  • 1 sheet puff pastry, thawed
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded sharp cheddar cheese
  • ½ cup (50 g) shredded mozzarella cheese
  • 2–3 fresh jalapeños, finely diced
  • 4–6 slices cooked bacon, finely chopped
  • 2 tablespoons green onions, finely sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste

For the topping

  • 1 egg
  • 1 tablespoon water
  • ¼ cup shredded cheddar cheese
  • 1 tablespoon sliced green onions
  • Optional: sliced jalapeño rings
  • Optional: flaky sea salt

Instructions

  1. Preheat the oven.
Heat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prepare the jalapeños.
Finely dice the jalapeños. For a milder flavor, remove the seeds and white membranes before chopping. If you enjoy a stronger kick, leave some of the membranes intact.
  3. Make the filling.
In a medium bowl, combine the softened cream cheese, shredded cheddar, mozzarella, diced jalapeños, chopped bacon, and green onions.

Add the garlic powder, onion powder, black pepper, and salt. Stir until everything is evenly incorporated.

  4. Prepare the puff pastry.
Place the thawed puff pastry on a lightly floured work surface. Gently roll it into an even rectangle if needed.

Avoid rolling it too thin—you want enough pastry to create beautiful flaky layers.

  5. Spread the filling.
Spread the jalapeño cream cheese mixture evenly over the pastry, leaving about ½ inch (1 cm) around the edges.

Don’t make the filling layer excessively thick, or it may squeeze out when you roll the pastry.

  6. Roll the pastry.
Starting from one long side, carefully roll the pastry into a tight log.

Roll firmly enough to keep the filling together but avoid squeezing it so hard that the filling comes out.

  7. Chill the log.
Wrap the log in plastic wrap or parchment paper and refrigerate for 20–30 minutes.

This step makes the pastry much easier to slice and helps the pinwheels hold their shape during baking.

  8. Slice.
Using a sharp knife, cut the log into slices approximately ½–¾ inch thick.

Wipe the knife between cuts if the cream cheese mixture becomes messy.

  9. Arrange on the baking sheet.
Place the slices cut-side up on the prepared baking sheet, leaving about an inch of space between each one.
  10. Make the egg wash.
Whisk together the egg and water. Lightly brush the exposed puff pastry with the egg wash.
  11. Add toppings.
Sprinkle each pinwheel with a little shredded cheddar. Add a thin jalapeño slice or a few green onions if desired.
  12. Bake.
Bake for 18–23 minutes, or until the puff pastry is deeply golden, crisp, and nicely puffed.
  13. Cool briefly.
Let the pinwheels cool on the baking sheet for 5 minutes before serving. The cheese filling will be extremely hot straight from the oven.

Tips for Perfect Pinwheels

  • Soften the cream cheese first so the filling spreads easily.
  • Don’t overfill the pastry. A thinner, even layer produces prettier spirals.
  • Chilling the rolled pastry is important. Cold pastry slices more cleanly and puffs better in the oven.
  • Use freshly shredded cheese when possible—it melts more smoothly.
  • For extra crispy bottoms, bake the pinwheels directly on parchment rather than in a deep baking dish.
  • If your puff pastry becomes soft while assembling, put it in the refrigerator for 10–15 minutes before continuing.

Adjust the Heat

For mild pinwheels, use one jalapeño and remove all seeds and membranes.

For medium heat, use 2–3 jalapeños with the seeds removed.

For spicy pinwheels, leave some seeds and membranes in and add a pinch of crushed red pepper flakes or a dash of hot sauce to the filling.

Easy Variations

Extra Cheesy:
Add ½ cup of Monterey Jack or pepper jack cheese to the filling.

Chicken Jalapeño Popper:
Add 1 cup of finely shredded cooked chicken for a heartier appetizer.

Ranch Jalapeño Popper:
Add 1 teaspoon of ranch seasoning to the cream cheese mixture.

No Bacon:
Simply leave out the bacon. You can replace it with finely chopped cooked chicken, turkey bacon, or extra cheese.

Everything-Seasoned:
Sprinkle the tops with everything-bagel seasoning before baking for extra flavor and crunch.

Make Ahead

You can assemble the entire pastry log up to 24 hours ahead of time. Wrap it tightly and refrigerate.

When you’re ready to bake, slice the chilled log, brush with egg wash, add your toppings, and bake as directed.

You can also freeze the unbaked sliced pinwheels. Freeze them in a single layer, then transfer them to a freezer-safe container. Bake from frozen, adding approximately 5–8 minutes to the baking time.

Serving Ideas

Serve these warm with:

  • Ranch dressing
  • Garlic aioli
  • Spicy mayo
  • Sour cream
  • Creamy cilantro-lime dip
  • Extra jalapeño popper sauce

Storage

Store leftover pinwheels in an airtight container in the refrigerator for up to 3 days.

For the best texture, reheat them in a 375°F (190°C) oven or air fryer until hot and crisp. Microwaving works in a pinch, but the pastry won’t stay as flaky.

Makes

Approximately 18–24 pinwheels, depending on how thickly you slice the roll.

For the ultimate jalapeño-popper experience, serve them warm with a cool ranch or sour-cream dip—the contrast between the crispy pastry, creamy cheese, and spicy jalapeño is fantastic.
