Ingredients
For the beef
- 1 lb (450 g) lean ground beef
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1 tablespoon Worcestershire sauce
- ½ small onion, finely diced
For the Big Mac sauce
- ½ cup (120 g) Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon ketchup
- 1 tablespoon finely diced dill pickles
- 1 teaspoon pickle juice
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
For the bowls
- 4 cups chopped romaine or iceberg lettuce
- 1 cup cooked rice, quinoa, or cauliflower rice
- 1 cup shredded cheddar cheese
- ½ cup diced dill pickles
- ½ cup finely diced onion
- ½ cup diced tomatoes, optional
- ¼ cup shredded lettuce for topping
- Sesame seeds, optional
Instructions
- Make the Big Mac sauce.
In a small bowl, combine the Greek yogurt, mayonnaise, mustard, ketchup, diced pickles, pickle juice, garlic powder, onion powder, and paprika. Stir until smooth.Taste and adjust the seasoning. Add a little more pickle juice for tanginess or mustard for a sharper flavor.
- Cook the beef.
Heat a large skillet over medium-high heat. Add the diced onion and cook for 2–3 minutes until it begins to soften. - Add the ground beef.
Add the ground beef and break it apart with a spatula. Cook for approximately 6–8 minutes, stirring occasionally, until browned and cooked through. - Season the beef.
Add the salt, black pepper, garlic powder, onion powder, paprika, and Worcestershire sauce. Stir well and cook for another 1–2 minutes so the flavors come together. - Prepare your bowl base.
Divide the chopped lettuce among four bowls. Add about ¼ cup of cooked rice, quinoa, or cauliflower rice to each bowl. For a more substantial meal, use regular rice. For a lighter, lower-carb bowl, cauliflower rice works particularly well.
- Add the beef and cheese.
Divide the warm beef evenly among the bowls. Sprinkle shredded cheddar cheese over the beef while it’s still hot so the cheese begins to melt. - Add the toppings.
Top each bowl with diced pickles, onions, and tomatoes if using. - Drizzle with sauce.
Spoon a generous amount of Big Mac sauce over each bowl. - Finish and serve.
Sprinkle with sesame seeds if desired. Serve immediately while the beef is warm and the cheese is slightly melted.
Tips for the Best Protein Bowls
- Use lean ground beef to keep the bowl high in protein without making it overly greasy.
- Don’t skip the pickles. Their tangy crunch is one of the key flavors that makes this taste like a Big Mac.
- For a stronger Big Mac flavor, finely dice the onions rather than using large pieces.
- Let the beef get slightly browned and crispy in the skillet before stirring too much. Those browned bits add lots of flavor.
- Add the sauce just before serving so the lettuce stays crisp.
- For extra protein, use high-protein Greek yogurt in the sauce and add an extra portion of beef.
High-Protein Variation
For an even more protein-packed bowl, use:
- 6 oz (170 g) lean ground beef per serving
- ½ cup cooked rice
- ½ cup high-protein Greek yogurt in the sauce
- Extra cheddar cheese
This makes a very filling meal while keeping the classic cheeseburger flavors.
Low-Carb Version
Skip the rice and build the bowl with:
- Crisp iceberg lettuce
- Seasoned ground beef
- Cheddar cheese
- Pickles
- Onion
- Big Mac sauce
- Diced tomatoes
You can also add sliced avocado if you’d like some extra healthy fats.
Meal Prep
These bowls are excellent for meal prep.
Cook the beef and rice ahead of time and refrigerate them separately from the lettuce and toppings. Prepare the sauce and keep it in a sealed container.
When you’re ready to eat, assemble the bowl with the cold vegetables, then add reheated beef and rice. Finish with cheese, pickles, onions, and sauce.
For the best texture, keep the sauce separate until you’re ready to eat.
