Homemade Chocolate Mousse Bars

These creamy, rich chocolate mousse bars have a buttery biscuit base and a light chocolate mousse layer. They’re easy to make and require no complicated techniques.

Ingredients

For the Base

  • 200 g chocolate biscuits or digestive biscuits

  • 80 g melted butter

For the Chocolate Mousse

  • 200 g dark or semi-sweet chocolate, chopped

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract

  • 300 ml heavy whipping cream, chilled

  • 2 tablespoons powdered sugar

For the Topping

  • 50 g chocolate, grated or shaved

  • Cocoa powder, optional

Instructions

1. Make the Biscuit Base

Crush the biscuits into fine crumbs. Mix them with the melted butter until evenly combined.

Press the mixture firmly into the bottom of a lined 8-inch (20 cm) square pan. Refrigerate for about 20 minutes.

2. Prepare the Chocolate

Place the chopped chocolate and milk in a heatproof bowl. Melt gently over a pan of simmering water, stirring until smooth.

Remove from the heat and stir in the vanilla. Allow the chocolate to cool slightly—it should be warm, not hot.

3. Make the Mousse

Whip the chilled cream with the powdered sugar until it forms soft peaks.

Gently fold about one-third of the whipped cream into the melted chocolate. Then fold in the remaining cream until the mixture is smooth and fluffy.

Avoid overmixing, or the mousse can lose its light texture.

4. Assemble

Spread the chocolate mousse evenly over the chilled biscuit base.

Smooth the top with a spatula and sprinkle with grated chocolate or a light dusting of cocoa powder.

5. Chill

Cover and refrigerate for at least 4–6 hours, preferably overnight, until completely set.

6. Cut and Serve

Lift the mousse from the pan using the baking-paper lining. Cut into bars with a sharp knife.

For cleaner slices, dip the knife in hot water, wipe it dry, and then cut each bar.

Tips

  • Use good-quality chocolate for the best flavor.

  • Make sure the melted chocolate isn’t hot when you fold in the whipped cream.

  • For a firmer bar, refrigerate overnight.

  • For an extra chocolatey topping, drizzle melted chocolate over the finished bars before chilling.

  • Keep the bars refrigerated until ready to serve.
