Hearty Vegetable Soup

Ingredients
Vegetables
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 medium potatoes, peeled and diced
- 1 zucchini, diced
- 1 cup green beans, cut into small pieces
- 1½ cups chopped cabbage
- 1 cup frozen corn
- 1 cup frozen peas
Soup Base
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 6 cups vegetable broth
- 1 can (15 oz) kidney beans or cannellini beans, drained and rinsed
- 1 teaspoon dried Italian seasoning
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- 1 bay leaf
- 1 teaspoon salt, plus more to taste
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes, optional
To Finish
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Freshly grated Parmesan, optional
1. Sauté the aromatics
Heat the olive oil in a large Dutch oven or soup pot over medium heat.
Add the onion, carrots, and celery.
Cook for 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
Add the garlic.
Cook for another 30–60 seconds, until fragrant.
2. Add the hearty vegetables
Add the potatoes, zucchini, green beans, and cabbage.
Stir everything together.
Cook for 3–4 minutes.
This brief sauté helps develop deeper flavor.
3. Add the tomato and seasonings
Stir in the tomato paste.
Cook for about 1 minute.
Add:
- Diced tomatoes
- Italian seasoning
- Oregano
- Smoked paprika
- Bay leaf
- Salt
- Black pepper
- Red pepper flakes
Stir well.
4. Add the broth
Pour in the vegetable broth.
Bring the soup to a boil.
Once boiling, reduce the heat to medium-low.
Cover partially.
5. Simmer
Let the soup simmer for approximately 20–25 minutes, or until the potatoes and carrots are tender.
Stir occasionally.
6. Add the beans, peas, and corn
Add the drained beans, frozen peas, and frozen corn.
Continue simmering for another 7–10 minutes.
The vegetables should be tender but not mushy.
7. Finish the soup
Remove the bay leaf.
Stir in the lemon juice and fresh parsley.
Taste.
Adjust with additional salt, pepper, or Italian seasoning as needed.
The small amount of lemon juice brightens the entire soup.
8. Serve
Ladle into bowls.
Top with:
- Fresh parsley
- Parmesan
- Black pepper
- A drizzle of olive oil
Serve with crusty bread or warm whole-grain rolls.
Extra-Hearty Version
Add:
- 1 cup cooked barley
- 1 cup cooked pasta
- 1 additional can of beans
If adding uncooked barley, add it with the broth and allow extra cooking time.
For pasta, cook it separately and add it near the end to prevent it from becoming mushy.
Italian Vegetable Soup
Add:
- 1 teaspoon basil
- ½ teaspoon fennel seed
- 1 cup chopped spinach
- ½ cup small pasta
Finish with Parmesan and fresh basil.
Vegetable Beef Soup
Brown 1 lb ground beef or lean stew meat before adding the onions.
Drain excess fat if needed.
Continue with the recipe as written.
Use beef broth instead of vegetable broth.
Creamy Vegetable Soup
Once the vegetables are tender, remove about 2 cups of soup.
Blend until smooth.
Return the blended portion to the pot.
This naturally thickens the soup while leaving plenty of vegetables whole.
For an even creamier version, stir in ½ cup milk or half-and-half at the end.
Spicy Vegetable Soup
Add:
- ½ teaspoon cayenne
- 1 teaspoon chili powder
- ½ teaspoon red pepper flakes
- 1 chopped jalapeño
Finish with lime juice instead of lemon.
Slow Cooker Version
Add all ingredients except the peas, corn, lemon juice, and fresh parsley to the slow cooker.
Cook:
- LOW: 6–7 hours
- HIGH: 3–4 hours
Add the peas and corn during the final 20–30 minutes.
Remove the bay leaf.
Stir in lemon juice and parsley just before serving.
Storage
Let the soup cool slightly, then refrigerate in airtight containers.
It will keep for approximately 4 days.
The flavor often becomes even better the next day.
Freezing
This soup freezes very well.
Cool completely and portion into freezer-safe containers.
Freeze for up to 3 months.
If you plan to freeze it, consider leaving out pasta or adding it fresh when reheating, as pasta can become soft after freezing.
Best tip
Cut the vegetables into similar-sized pieces, but don’t cook them all for the same amount of time. Add sturdy vegetables such as potatoes and carrots first, followed by zucchini, cabbage, peas, and corn. This gives you a soup where everything is tender without turning mushy.
