Ingredients
Vegetables
- 2 large cucumbers, thinly sliced
- 1 medium red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, very thinly sliced
- 1 tablespoon freshly grated ginger
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 1 small jalapeño, thinly sliced, optional
Pickling Dressing
- ½ cup apple cider vinegar
- ¼ cup water
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- ½ teaspoon turmeric
- ½ teaspoon black pepper
- ¾ teaspoon salt
- ½ teaspoon red pepper flakes, optional
- 1 tablespoon fresh lemon juice
1. Prepare the vegetables
Wash and dry all the vegetables thoroughly.
Slice the cucumbers into thin rounds.
Thinly slice the red onion and bell peppers.
Slice the garlic very thinly.
Grate the fresh ginger.
Place everything into a large glass or nonreactive mixing bowl.
Add the parsley, dill, and jalapeño if using.
2. Make the pickling liquid
In a small bowl, whisk together:
- Apple cider vinegar
- Water
- Olive oil
- Honey or maple syrup
- Dijon mustard
- Turmeric
- Black pepper
- Salt
- Red pepper flakes
- Lemon juice
Whisk until the honey has dissolved and the dressing is well combined.
3. Combine
Pour the pickling dressing over the vegetables.
Toss thoroughly.
Make sure the cucumber, onion, and peppers are coated evenly.
4. Let it pickle
Cover the bowl and refrigerate for at least 1 hour.
For stronger flavor, let it sit for 2–4 hours.
Give it a stir once or twice while it rests.
The onion and peppers will soften slightly while the cucumbers remain pleasantly crisp.
5. Serve
Before serving, toss again.
