If you want a very low-carb, bread-like mug recipe that takes about 90 seconds, this version is richer, softer, and more satisfying than a basic egg-in-a-mug recipe.
Ingredients
For 1 mug bread
- 1 large egg
- 1½ tbsp melted butter
- 2 tbsp finely ground almond flour
- 1 tbsp coconut flour
- ½ tsp baking powder
- â tsp salt
- 1 tbsp shredded mozzarella or cheddar (optional)
- Ÿ tsp garlic powder (optional, for savory bread)
- A pinch of dried parsley or Italian herbs (optional)
Instructions
1. Prepare the mug
Choose a wide, microwave-safe mug or small ramekin. A wider container gives you a flatter piece of bread that is easier to slice.
Grease the inside lightly with butter or a little cooking oil. This helps prevent sticking.
2. Mix the egg and butter
Add the egg and melted butter to the mug.
Whisk vigorously with a fork for about 20â30 seconds, making sure the egg yolk and white are completely combined.
3. Add the dry ingredients
Add:
- Almond flour
- Coconut flour
- Baking powder
- Salt
- Garlic powder and herbs, if using
Mix everything thoroughly until you have a smooth, thick batter.
If you’re adding cheese, fold it in at this stage.
4. Let the batter sit briefly
Allow the mixture to stand for 10â15 seconds.
The coconut flour absorbs some of the moisture, so the batter will become slightly thicker. Don’t worry if it looks a little wetâthat’s normal.
5. Microwave for 60â90 seconds
Place the mug in the microwave and cook on HIGH for about 75 seconds.
Check the center.
- If it’s firm and springy, it’s ready.
- If the center is still wet, microwave for another 10â15 seconds.
- Try not to overcook it, because the egg can become rubbery.
6. Let it rest
Remove the mug carefullyâit will be hot.
Let the bread rest for 30â60 seconds. Run a small knife around the edges and gently remove the bread from the mug.
7. Toast it for the best texture

Slice the bread horizontally and toast the pieces in a dry frying pan for 1â2 minutes per side, or put them in a toaster if they’re firm enough.
