Fluffy Gluten-Free Pancakes

These gluten-free pancakes are light, fluffy, and tender with golden, buttery edges. They’re easy enough for a weekday breakfast and delicious with fresh berries, maple syrup, or a little butter.

Ingredients

  • 1½ cups (210 g) gluten-free all-purpose flour blend
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • 1¼ cups (300 ml) milk
  • 2 tbsp melted butter, plus more for cooking
  • 1 tsp vanilla extract
  • 1 tsp lemon juice or apple cider vinegar

Optional additions

  • ½ tsp cinnamon
  • ½ cup blueberries
  • ½ cup mini chocolate chips
  • 1 tsp lemon zest
  • ¼ cup finely chopped pecans

Instructions

1. Combine the dry ingredients

In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.

Make sure the leavening ingredients are evenly distributed.

2. Mix the wet ingredients

In a separate bowl, whisk together the eggs, milk, melted butter, vanilla, and lemon juice.

The lemon juice helps activate the baking soda and contributes to a lighter texture.

3. Make the batter

Pour the wet ingredients into the dry ingredients.

Whisk gently until just combined.

A few small lumps are perfectly fine.

Don’t overmix. Overmixing can make gluten-free pancakes dense or gummy.

The batter should be thick but pourable.

If it seems excessively thick, add another 1–2 tablespoons of milk.

4. Let the batter rest

Allow the batter to rest for 5–10 minutes.

Gluten-free flour absorbs liquid as it sits, so this short rest improves the texture.

If the batter becomes too thick afterward, loosen it with a splash of milk.

Cook the Pancakes

5. Heat the pan

Place a nonstick skillet or griddle over medium-low to medium heat.

Lightly grease with butter.

The pan is ready when a tiny drop of batter sizzles gently without immediately turning dark.

6. Add the batter

Pour approximately ¼ cup of batter onto the pan for each pancake.

Leave space between them.

If using blueberries or chocolate chips, sprinkle them over the pancakes now.

7. Cook the first side

Cook for approximately 2–3 minutes.

You’ll see bubbles forming across the surface and the edges will begin to look set.

The underside should be golden brown.

8. Flip

Carefully slide a spatula underneath and flip.

Cook for another 1½–2 minutes, until golden and cooked through.

Don’t press down on the pancakes after flipping—you’ll push out the air that makes them fluffy.

9. Continue cooking

Repeat with the remaining batter, adding a little butter to the skillet between batches if needed.

Keep finished pancakes warm while you cook the rest.

Blueberry Gluten-Free Pancakes

Fold ½ cup fresh blueberries into the batter after it has rested.

Alternatively, sprinkle the berries directly onto each pancake while the first side cooks.

Serve with butter and warm maple syrup.

Banana Cinnamon Pancakes

Add to the wet ingredients:

  • 1 ripe banana, mashed
  • ½ tsp cinnamon

Because the banana adds moisture, you may need an extra tablespoon or two of gluten-free flour.

Chocolate Chip Pancakes

Fold ½ cup mini chocolate chips into the finished batter.

Cook over slightly lower heat because the chocolate can burn if the pan is too hot.

Top with sliced bananas and a small drizzle of maple syrup.

Dairy-Free Version

Replace the milk with:

  • Unsweetened almond milk
  • Oat milk labeled gluten-free
  • Soy milk
  • Coconut milk beverage

Replace the butter with melted coconut oil or a dairy-free butter substitute.

Egg-Free Version

For an egg-free variation, replace each egg with a suitable commercial egg replacer or a prepared flax egg.

The texture will be somewhat different, but the pancakes can still be soft and satisfying.

Tips for Perfect Gluten-Free Pancakes

Check your flour blend

Different gluten-free flour blends absorb liquid differently.

If your blend contains xanthan gum, you generally don’t need to add extra.

Let the batter rest

This is especially useful with gluten-free flour because it allows the starches and fibers to hydrate.

Don’t make the pancakes too large

Three- to four-inch pancakes are easier to flip and cook more evenly.

Use moderate heat

Gluten-free pancakes can brown before the center has finished cooking if the skillet is too hot.

Don’t overmix

Mix only until the flour is incorporated.

A few small lumps are preferable to overworked batter.

Make-Ahead & Freezing

Allow leftover pancakes to cool completely.

Place parchment between them and store in an airtight freezer bag.

Freeze for up to 2–3 months.

Reheat in a toaster, toaster oven, skillet, or microwave.

For crisp edges, the toaster or skillet works best.
