Oatmeal Cottage Cheese Pancakes

These oatmeal cottage cheese pancakes are soft, fluffy, and naturally rich in protein. The oats provide a hearty texture while cottage cheese keeps the pancakes moist and tender. Everything can be blended together for an especially smooth batter.
Ingredients
- 1 cup (90 g) rolled oats
- 1 cup (225 g) cottage cheese
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp cinnamon
- 1 tbsp honey or maple syrup
- ¼ tsp salt
- 2 tbsp milk, plus more if needed
- 1 tsp butter or oil, for cooking
Optional additions
- ½ cup blueberries
- ½ mashed ripe banana
- 1 tbsp chia seeds
- 1 tbsp ground flaxseed
- 2 tbsp mini chocolate chips
- ¼ tsp nutmeg
- 1 tsp lemon zest
Instructions
1. Blend the batter
Add the oats, cottage cheese, eggs, vanilla, baking powder, cinnamon, honey, salt, and milk to a blender.
Blend for approximately 30–45 seconds, until mostly smooth.
The batter should be thick but pourable.
If it seems too thick, add another tablespoon of milk.
2. Let the batter rest
Allow the batter to rest for 3–5 minutes.
The oats will absorb some of the liquid and the batter will thicken slightly.
If it becomes too thick, stir in a splash of milk.
Cook the Pancakes
3. Heat the skillet
Place a nonstick skillet or griddle over medium-low heat.
Lightly grease with butter or oil.
4. Add the batter
Pour about ¼ cup of batter into the skillet for each pancake.
Keep them around 3–4 inches wide so they’re easy to flip.
If using blueberries or chocolate chips, sprinkle them over the tops.
5. Cook
Cook for approximately 2–3 minutes, until bubbles appear and the edges look set.
The bottom should be golden brown.
6. Flip
Gently slide a spatula underneath and flip.
Cook for another 1½–2 minutes, until golden and cooked through.
Avoid pressing down on the pancakes.
7. Finish the batch
Repeat with the remaining batter.
Keep the cooked pancakes warm while finishing the rest.
Blueberry Cottage Cheese Pancakes
After blending the batter, gently fold in ½ cup blueberries.
You can use fresh or frozen berries.
For an especially fresh flavor, add a little lemon zest to the batter.
Banana Oat Pancakes
Blend in ½ ripe banana along with the other ingredients.
Reduce the honey or maple syrup if desired.
Add an extra pinch of cinnamon for a naturally sweet breakfast.
Chocolate Version
Add:
- 1 tbsp unsweetened cocoa powder
- 2 tbsp mini chocolate chips
Top with sliced strawberries and a spoonful of Greek yogurt.
Extra-Protein Version
For more protein, add ½ scoop of your favorite protein powder.
Because protein powder thickens the batter, add another 1–2 tablespoons of milk if necessary.
Tips for Fluffy Pancakes
Use rolled oats
Old-fashioned rolled oats blend into a better pancake texture than steel-cut oats.
Quick oats will also work.
Don’t overblend
Blend just until the ingredients are combined and mostly smooth.
Let the batter rest
This gives the oats time to hydrate and produces a thicker, more cohesive batter.
Cook slowly
Medium-low heat allows the center to cook before the outside becomes too dark.
Don’t make them too large
Smaller pancakes are easier to flip and less likely to remain wet in the center.
Make-Ahead
Cooked pancakes can be refrigerated in an airtight container for 3–4 days.
Reheat in a skillet, toaster, or microwave.
For longer storage, freeze them with parchment between each pancake for up to 2–3 months.
