Freshly Baked Chocolate Loaf Cake

A rich, moist chocolate loaf cake with a tender crumb and deep chocolate flavor. It’s easy enough for a weekday treat but looks beautiful enough to serve for dessert. A simple chocolate glaze on top makes it extra indulgent.

🛒 Ingredients

For the chocolate loaf

  • 1½ cups (190 g) all-purpose flour
  • ½ cup (50 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup (180 ml) buttermilk
  • ½ cup (90 g) semi-sweet chocolate chips
  • ½ cup (120 ml) hot coffee or hot water

Optional chocolate glaze

  • ¾ cup (130 g) semi-sweet chocolate chips
  • ¼ cup (60 ml) heavy cream
  • 1 tbsp butter

Optional toppings

  • Chocolate shavings
  • Chopped toasted hazelnuts
  • Mini chocolate chips
  • Powdered sugar
  • Fresh berries

👩‍🍳 Instructions

1. Prepare the oven

Preheat your oven to 350°F (175°C).

Grease a 9 × 5-inch (23 × 13 cm) loaf pan and line it with parchment paper, leaving some parchment hanging over the sides.

This makes removing the finished cake much easier.

2. Mix the dry ingredients

In a medium bowl, whisk together:

  • Flour
  • Cocoa powder
  • Baking powder
  • Baking soda
  • Salt

Whisk thoroughly to break up any cocoa lumps.

3. Cream the butter and sugar

In a large bowl, beat the softened butter, granulated sugar, and brown sugar for about 2–3 minutes.

The mixture should become lighter and fluffy.

This helps create a lighter texture in the finished loaf.

4. Add the eggs

Add the eggs one at a time, beating well after each addition.

Add the vanilla and mix briefly.

5. Combine the batter

Add about one-third of the dry ingredients to the butter mixture.

Mix gently.

Add half of the buttermilk.

Continue alternating:

Dry ingredients → buttermilk → dry ingredients → buttermilk → remaining dry ingredients

Mix only until the flour disappears.

6. Add the hot liquid

Slowly pour in the hot coffee or hot water while gently mixing.

The batter will become noticeably thinner.

Don’t worry—that’s exactly what you want. The hot liquid helps the cocoa bloom and gives the cake a deeper chocolate flavor.

7. Fold in chocolate chips

Add the chocolate chips.

Fold gently with a spatula until evenly distributed.


🍰 Bake the Loaf

8. Fill the pan

Pour the batter into the prepared loaf pan.

Smooth the top with a spatula.

If desired, sprinkle a few extra chocolate chips over the surface.

9. Bake

Bake for approximately 45–55 minutes.

Start checking around 45 minutes.

The loaf is ready when:

  • The top is set and slightly cracked.
  • The center springs back lightly when touched.
  • A toothpick inserted into the center comes out with a few moist crumbs.

Don’t wait for the toothpick to come out completely dry, or the loaf may be overbaked.

If the top becomes dark before the center is finished, loosely cover it with foil during the final 10–15 minutes.

10. Cool

Allow the loaf to cool in the pan for 15 minutes.

Lift it out using the parchment paper and transfer it to a wire rack.

Let it cool for at least 30–45 minutes before glazing.


🍫 Make the Chocolate Glaze

11. Heat the cream

Warm the heavy cream in a small saucepan over low heat until it’s hot but not boiling.

Remove from the heat.

12. Add chocolate

Place the chocolate chips in a bowl.

Pour the hot cream over them.

Let sit for 2 minutes.

Add the butter and whisk until completely smooth and glossy.

13. Glaze the loaf

Pour the chocolate glaze over the cooled loaf.

Let it naturally drip down the sides.

Sprinkle with chocolate shavings, chopped nuts, or a little flaky sea salt.

Allow the glaze to set for about 15–20 minutes before slicing.


⭐ Tips for a Moist Chocolate Loaf

Don’t overmix the batter. Once the flour is incorporated, stop mixing.

Use hot coffee. You won’t necessarily taste coffee—it simply intensifies the chocolate flavor.

Don’t overbake. A few moist crumbs on the toothpick are ideal.

Use room-temperature eggs and butter. They blend more evenly.

Let it cool before cutting. The crumb becomes softer and more stable as it cools.

Chocolate Raspberry

Fold in ½ cup fresh or frozen raspberries and top with chocolate glaze.
