🛒 Ingredients
For the butter pecans
- 1 cup (115 g) pecan halves, roughly chopped
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- Pinch of salt
For the ice cream
- 2 cups (480 ml) heavy whipping cream
- 1 cup (240 ml) whole milk
- ¾ cup (150 g) brown sugar
- 4 large egg yolks
- 1 tsp vanilla extract
- ¼ tsp salt
👩🍳 Instructions
1. Toast the pecans
Place a skillet over medium-low heat.
Add the butter and let it melt.
Add the chopped pecans, brown sugar, and a pinch of salt.
Cook for 4–6 minutes, stirring frequently, until the pecans are fragrant, lightly toasted, and coated in the buttery sugar mixture.
Be careful not to burn them.
Transfer the pecans to a plate lined with parchment paper and let them cool completely.
2. Warm the cream and milk
Pour the heavy cream and whole milk into a medium saucepan.
Add the brown sugar and salt.
Heat over medium heat, stirring occasionally, until the mixture is hot and the sugar has dissolved.
Don’t bring it to a full boil.
3. Whisk the egg yolks
Place the egg yolks in a separate bowl.
Whisk them until smooth.
Slowly drizzle about ½ cup of the hot cream mixture into the yolks while whisking constantly.
This gently warms the eggs and prevents them from scrambling.
4. Combine everything
Slowly pour the warmed egg mixture back into the saucepan while whisking constantly.
Return the saucepan to low-medium heat.
Cook for approximately 5–8 minutes, stirring continuously with a wooden spoon or spatula.
The custard is ready when it thickens enough to coat the back of the spoon.
Don’t let it boil.
5. Add vanilla
Remove the custard from the heat.
Stir in the vanilla extract.
For an exceptionally smooth ice cream, pour the custard through a fine-mesh strainer into a clean bowl.
6. Chill the custard
Cover the surface with plastic wrap, pressing the wrap directly against the custard.
Refrigerate for at least 4 hours, preferably overnight.
The mixture needs to be thoroughly cold before churning.
🍨 Churn the Ice Cream
7. Add the custard to your ice cream maker
Pour the chilled custard into your ice cream maker.
Churn according to your machine’s instructions, usually around 20–30 minutes.
The mixture should become thick and soft-serve-like.
8. Add the pecans
During the last 2–3 minutes of churning, add most of the cooled butter pecans.
Reserve a few for the top.
Adding them near the end keeps them crunchy and distributes them evenly.
9. Freeze
Transfer the churned ice cream to a freezer-safe container.
Sprinkle the remaining pecans over the top.
Press a piece of parchment or plastic wrap directly against the surface.
Freeze for 3–4 hours, or until firm enough to scoop.
10. Serve
Let the ice cream sit at room temperature for 5–10 minutes before scooping.
Top with extra toasted pecans and a drizzle of caramel sauce if desired.
🥄 No Ice Cream Maker?
You can still make it!
Prepare the custard exactly as above and chill it thoroughly.
Pour it into a shallow freezer-safe container.
Freeze for about 45 minutes, then stir vigorously.
Return it to the freezer and repeat every 30–45 minutes for about 3 hours, breaking up ice crystals each time.
Once it’s thick and creamy, stir in the butter pecans and freeze until firm.
This method takes more effort but produces a surprisingly creamy result.
⭐ Tips for Extra-Creamy Ice Cream
Use full-fat dairy. Whole milk and heavy cream give the best texture.
Don’t boil the custard. High heat can scramble the egg yolks.
Chill thoroughly. A very cold custard churns into a smoother ice cream.
Toast the pecans. This brings out their natural buttery flavor and keeps them crunchy.
Don’t add the pecans too early. Adding them during the final minutes of churning prevents them from becoming soggy.
