đ©âđł Instructions
1. Prepare the pan
Line an 8 à 8-inch (20 à 20 cm) square pan with parchment paper.
Leave some parchment hanging over two sides. This will make it much easier to lift the finished bars out of the pan.
Lightly grease the parchment if desired.
2. Combine the crunchy ingredients
Add the crispy rice cereal and rolled oats to a large mixing bowl.
Gently stir them together.
Be careful not to crush the cerealâyou want those little crunchy pieces to remain intact.
3. Make the peanut butter mixture
Add the peanut butter, honey, and brown sugar to a small saucepan.
Warm over low to medium-low heat, stirring constantly.
Cook for approximately 2â3 minutes, just until everything is melted together and smooth.
Don’t let the mixture boil.
Remove from the heat and stir in the vanilla and salt.
4. Combine
Pour the warm peanut butter mixture over the cereal and oats.
Use a spatula to gently fold everything together.
Make sure the cereal is evenly coated.
5. Press into the pan
Transfer the mixture to the prepared pan.
Spread it evenly.
Place a piece of parchment paper over the top and press down firmly and evenly with your hands or the bottom of a glass.
This is importantâthe more firmly you compact the mixture, the less likely the bars are to crumble.
đ« Make the Chocolate Layer
6. Melt the chocolate
Place the chocolate chips, 2 tablespoons peanut butter, and coconut oil in a microwave-safe bowl.
Microwave in 20-second intervals, stirring thoroughly after each interval.
Continue until completely smooth.
Alternatively, melt everything gently over a double boiler.
7. Add the chocolate
Pour the melted chocolate over the peanut butter crunch base.
Spread it evenly with a spatula.
For extra crunch, sprinkle chopped peanuts over the chocolate while it’s still soft.
Finish with a tiny pinch of flaky sea salt if desired.
8. Chill
Place the pan in the refrigerator for 1â2 hours, or until the chocolate is completely set and the base is firm.
For a faster option, place it in the freezer for approximately 30â45 minutes.
Don’t leave it frozen too long if you want a softer, chewy texture.
9. Cut into bars
Lift the entire slab from the pan using the parchment paper.
Place it on a cutting board.
Allow it to sit for about 5 minutes if it’s very cold.
Use a sharp knife to cut into 12 large bars or 16 smaller squares.
For clean cuts, wipe the knife between slices.
â Tips for Perfect Crunch Bars
Press firmly. This is the secret to bars that hold together.
Don’t overheat the peanut butter mixture. Gentle heating is enough to combine everything.
Keep the cereal crunchy. Fold it in gently rather than stirring aggressively.
Let the chocolate fully set. Cutting too early can cause the chocolate layer to crack or slide.
Use creamy peanut butter. Natural peanut butter can sometimes separate and make the bars softer.
đ„ Delicious Variations
Extra Peanut Butter
Drizzle melted peanut butter over the chocolate layer and swirl it with a toothpick.
Dark Chocolate & Sea Salt
Use 70% dark chocolate and finish with flaky sea salt.
Nutty Crunch
Add œ cup chopped roasted peanuts, almonds, or cashews to the base.
Coconut Chocolate
Add œ cup unsweetened shredded coconut to the cereal mixture.
S’mores
Add mini marshmallows to the base and use milk chocolate for the topping.
Protein Version
Replace Œ cup of the oats with Œ cup vanilla or chocolate protein powder. If the mixture becomes too dry, add another tablespoon of peanut butter.
đ§ Storage
Store the bars in an airtight container in the refrigerator for up to 1 week.
For a softer texture, let them sit at room temperature for 5â10 minutes before eating.
They can also be frozen for up to 2 months. Separate layers with parchment paper.
đ« Best finishing touch
For that irresistible peanut butter cup + crispy chocolate bar combination, drizzle a little warm peanut butter over the chocolate before it sets, then sprinkle with roasted peanuts and a tiny pinch of flaky sea salt.
