Easy No-Knead Crusty Homemade Bread
This easy no-knead bread has a beautifully crisp, golden crust and a soft, chewy center. You only need a few basic ingredients, and there’s no kneading required. Most of the work is simply letting the dough rest while time develops the flavor.Yield: 1 large loaf

- 3 cups (390 g) all-purpose or bread flour
- 1½ tsp salt
- ½ tsp instant or active dry yeast
- 1½ cups (360 ml) warm water
- 1 tsp honey or sugar, optional

1. Mix the dry ingredients
Add the flour, salt, and yeast to a large mixing bowl.
Stir thoroughly to distribute the yeast and salt.
If using honey or sugar, add it as well.
2. Add the water
Pour in the warm water.
Using a wooden spoon or rubber spatula, stir until everything comes together into a sticky, shaggy dough.
Don’t worry about making it smooth.
There should be no large pockets of dry flour, but the dough will look rough and messy.
That’s exactly what you want.
3. Cover and let it rise
Cover the bowl tightly with plastic wrap, a lid, or a clean kitchen towel.
Leave it at room temperature for 12–18 hours.
Overnight works perfectly.
During this long rest, the yeast develops the flavor and gluten structure that you would normally develop by kneading.
4. Check the dough
After rising, the dough should look:
- Puffy
- Bubbly
- Slightly domed
- Much larger than when you started
If your kitchen is particularly warm, the dough may be ready closer to 10–12 hours.
If your kitchen is cool, it may need closer to 18 hours.

5. Flour your work surface
Generously flour a work surface.
The dough will be very sticky, so don’t be afraid to use enough flour to handle it.
6. Turn out the dough
Scrape the dough gently onto the floured surface.
Sprinkle a little flour over the top.

You don’t need to knead it.
The goal is simply to create a rough, round loaf.
7. Rest the dough
Place the dough seam-side down on a piece of parchment paper.
Cover loosely with a clean towel.

8. Heat the oven
Place a 4–6 quart Dutch oven with its lid inside your oven.
Preheat the oven to 450°F (230°C).
Let the Dutch oven heat for at least 30 minutes.
Be extremely careful: the pot and lid will become very hot.

9. Transfer the dough
Using the parchment paper as a sling, carefully lower the dough into the hot Dutch oven.
If desired, use a sharp knife or bread lame to make a shallow X or a few decorative cuts across the top.
This allows the bread to expand without tearing unpredictably.
10. Bake covered
Put the lid on the Dutch oven.
Bake at 450°F (230°C) for 30 minutes.
The trapped steam creates that beautiful crusty exterior.
11. Bake uncovered
Remove the lid.
Continue baking for another 10–15 minutes, until the loaf is deep golden brown.
For an especially crisp crust, bake until the loaf reaches a rich amber-brown color.
12. Cool completely
Carefully remove the bread from the Dutch oven.
Place it on a wire rack.
Let it cool for at least 1 hour before slicing.
As tempting as it is to cut into it immediately, the interior is still setting while the bread cools.

Use the right water temperature
The water should be warm, not hot—roughly 100–110°F (38–43°C). Very hot water can damage the yeast.
Don’t add lots of flour
The dough is supposed to be sticky. Adding too much flour can make the finished bread dense.
Give it enough time
The long fermentation is what creates the wonderful flavor and chewy texture.
Preheat the Dutch oven
A properly heated pot gives you a powerful burst of heat and steam when the dough goes in.
Don’t skip the cooling period
Cutting hot bread too soon can result in a gummy center.

Garlic & Herb
Add:
- 1 tsp garlic powder
