Dark Chocolate Raspberry Fluff
A rich yet airy no-bake dessert combining deep dark chocolate, tart raspberries, and a silky whipped cream filling. It tastes indulgent but comes together with very little effort.Servings: 6–8

Ingredients
Chocolate fluff
- 8 oz (225 g) cream cheese, softened
- ½ cup (60 g) powdered sugar
- ½ cup (45 g) unsweetened dark cocoa powder
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup (120 ml) heavy cream
- 1 cup (240 ml) cold heavy whipping cream
- ½ cup (120 g) Greek yogurt or sour cream
- 4 oz (115 g) dark chocolate, melted and slightly cooled
Raspberry layer
- 1½ cups (185 g) fresh raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
Optional crumb layer
- 1 cup chocolate cookie crumbs
- 3 tablespoons melted butter
- Pinch of salt
For topping
- Fresh raspberries
- Dark chocolate shavings
- Cocoa powder
- Whipped cream
- Optional chopped pistachios
1. Make the raspberry sauce
Add the raspberries, sugar, and lemon juice to a small saucepan.
Cook over medium heat for 4–6 minutes, gently crushing some of the berries.
Mix the cornstarch with the water.
Stir it into the berries.
Cook for another 1–2 minutes, until slightly thickened.
Remove from the heat and allow it to cool completely.
You can leave some berries whole for texture.
2. Prepare the chocolate
Melt the dark chocolate gently in the microwave in 20-second intervals, stirring between each interval.
Alternatively, melt it over a double boiler.
Let it cool until it’s warm but no longer hot.
Hot chocolate can cause the cream mixture to seize or lose its fluffy texture.
3. Make the chocolate base
Beat the softened cream cheese until completely smooth.
Add:
- Powdered sugar
- Cocoa powder
- Vanilla
- Salt
- Greek yogurt
Beat until creamy.
Add the melted dark chocolate.
Mix until smooth and evenly combined.
4. Whip the cream
In a separate bowl, beat the cold heavy whipping cream until medium-stiff peaks form.
Don’t overbeat it.
The cream should hold its shape while remaining silky.
5. Fold the mixture
Add about one-third of the whipped cream to the chocolate mixture.
Fold gently.
Add the remaining whipped cream in two additions.
Continue folding until the mixture is light and fluffy.
Don’t vigorously stir—the goal is to preserve the air in the whipped cream.
6. Make the cookie crumbs
If using the optional crumb layer, mix the chocolate cookie crumbs with melted butter and a pinch of salt.
Stir until evenly moistened.
7. Assemble
For individual dessert glasses, layer:
- Chocolate cookie crumbs
- Dark chocolate fluff
- Raspberry sauce
- More chocolate fluff
- Fresh raspberries
Repeat as needed.
For a large dish, press the crumbs into the bottom.
Spread half of the chocolate fluff over them.
Spoon over the raspberry sauce.
Add the remaining fluff and gently swirl the top with a knife.
8. Chill
Cover and refrigerate for 1–2 hours.
For a firmer, more mousse-like texture, refrigerate overnight.
9. Decorate
Just before serving, add:
- Fresh raspberries
- Dark chocolate shavings
- A light dusting of cocoa
- Whipped cream
- Chopped pistachios, if desired
A few curls of dark chocolate make a particularly elegant topping.
Extra-Dark Chocolate Version
Use 70–85% dark chocolate and replace the powdered sugar with an additional 1–2 tablespoons if you prefer a sweeter dessert.
The intense chocolate pairs beautifully with the tart raspberries.
Raspberry Cheesecake Chocolate Fluff
For a stronger cheesecake flavor, increase the cream cheese to 12 oz (340 g).
Add an extra ¼ cup Greek yogurt.
Use a chocolate graham cracker crumb layer underneath.
Chocolate Raspberry Brownie Fluff
Instead of cookie crumbs, use small pieces of fudgy brownies.
Layer:
- Brownie pieces
- Chocolate fluff
- Raspberry sauce
- Fresh raspberries
- More chocolate fluff
This turns the dessert into an incredibly decadent trifle-style treat.
White Chocolate Raspberry Version
Replace half of the dark chocolate with 2 oz (55 g) melted white chocolate.
Keep the cocoa powder for a subtle dark chocolate flavor.
The contrast between dark chocolate, white chocolate, and tart raspberry is delicious.
Make-Ahead
This dessert is ideal for entertaining.
Prepare it up to 24 hours ahead and keep covered in the refrigerator.
For the best texture, add the fresh raspberries and chocolate shavings shortly before serving.

If using the cookie crumb layer, it will soften over time and become more cake-like.
