Sweet Alabama Pecan Bread

Ingredients
Pecan bread
- 1½ cups (300 g) granulated sugar
- 1½ cups (300 g) packed light brown sugar
- 1 cup (240 ml) vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 cups (225 g) pecans, roughly chopped
- 1½ cups (about 225 g) finely diced sweet onion, optional but traditional in some versions
- 1 teaspoon cinnamon, optional
Optional topping
- ½ cup chopped pecans
- 2 tablespoons brown sugar
- 1 tablespoon melted butter
- Pinch of salt
1. Prepare the oven
Preheat the oven to 350°F (175°C).
Grease a 9 × 13-inch baking dish thoroughly.
For easier removal, line the bottom with parchment paper.
2. Combine the sugars and oil
In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil.
Mix until evenly combined.
The mixture will be thick and glossy.
3. Add the eggs and vanilla
Add the eggs one at a time, whisking well after each addition.
Add the vanilla.
Mix until smooth.
4. Mix the dry ingredients
In a separate bowl, whisk together:
- Flour
- Salt
- Baking powder
- Cinnamon, if using
Add the dry ingredients to the wet ingredients.
Stir just until combined.
Don’t overmix.
5. Add the pecans
Fold in the chopped pecans.
If you’re using the optional diced onion, fold it in now as well.
The batter will be quite thick.
6. Transfer to the pan
Spread the batter evenly into the prepared baking dish.
Use a spatula to smooth the top.
If using the optional topping, combine the chopped pecans, brown sugar, melted butter, and salt.
Sprinkle over the batter.
7. Bake
Bake for 35–45 minutes.
Start checking at 35 minutes.
The top should be golden brown and set.
A toothpick inserted near the center should come out with moist crumbs, but not wet batter.
Don’t overbake—the center is supposed to remain soft and rich.
8. Cool
Let the pecan bread cool in the pan for at least 20–30 minutes before cutting.
It becomes easier to slice and develops a wonderfully chewy texture as it cools.
For clean slices, allow it to cool completely.
Brown Butter Pecan Version
For deeper flavor, brown the oil/butter portion before mixing.
Use 1 cup unsalted butter instead of vegetable oil.
Melt it in a saucepan over medium heat and continue cooking until golden brown and nutty-smelling.
Let it cool for several minutes before adding it to the sugars.
This gives the bread a rich toasted-butter flavor.
Caramel Pecan Glaze
For an extra-decadent finish, make a quick glaze with:
- ½ cup brown sugar
- ¼ cup butter
- 2 tablespoons heavy cream
- ½ teaspoon vanilla
- Pinch of salt
Heat the butter and brown sugar in a small saucepan.
Simmer for 2–3 minutes.
Remove from the heat and stir in the cream, vanilla, and salt.
Drizzle over the cooled pecan bread.
Chocolate Pecan Version
Fold 1 cup semi-sweet chocolate chips into the batter.
The chocolate melts into little pockets throughout the bread and pairs beautifully with the toasted pecans.
Coconut Pecan Version
Add:
- 1 cup unsweetened shredded coconut
- ½ teaspoon vanilla
- ½ teaspoon cinnamon
