Classic Chocolate Mousse

Ingredients
- 6 oz (170 g) good-quality semi-sweet or dark chocolate, finely chopped
- 3 large eggs, separated
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 cup (240 ml) cold heavy whipping cream
- 2 tablespoons unsalted butter, optional
- Fresh berries, for serving
- Chocolate shavings, for garnish
1. Melt the chocolate
Place the chopped chocolate and butter, if using, in a heatproof bowl.
Melt gently over a saucepan of barely simmering water, stirring occasionally.
You can also microwave it in 15–20 second intervals, stirring between each interval.
Once smooth, remove from the heat.
Allow the chocolate to cool slightly—it should be warm but not hot.
2. Prepare the egg yolks
Place the egg yolks in a medium bowl.
Add the sugar and vanilla.
Whisk for about 1 minute, until slightly thickened and lighter in color.
Slowly whisk in the warm melted chocolate.
If the chocolate is too hot, it can scramble the egg yolks, so let it cool first.
3. Whip the cream
Pour the cold heavy cream into a chilled bowl.
Beat until soft-to-medium peaks form.
Don’t overwhip it.
You want the cream to remain smooth and silky.
4. Whip the egg whites
Place the egg whites in a clean bowl.
Add the salt.
Beat until foamy.
Continue beating until soft peaks form.
For a sweeter mousse, add another tablespoon of sugar gradually while whipping.
Stop once the whites are glossy and hold soft peaks.
5. Combine the chocolate mixture
Fold about one-third of the whipped cream into the chocolate mixture.
This loosens the chocolate base and makes the remaining folding easier.
Add another third and fold gently.
Add the final third.
6. Fold in the egg whites
Add the whipped egg whites in two or three additions.
Fold gently with a spatula.
Use slow, sweeping motions from the bottom of the bowl upward.
Don’t stir vigorously.
The goal is to retain as much air as possible.
7. Portion the mousse
Spoon the mousse into 6 small glasses, ramekins, or dessert cups.
Smooth the tops or leave them slightly rustic.
8. Chill
Cover and refrigerate for at least 2 hours.
For the best texture, chill for 4 hours or overnight.
The mousse will become firmer and more velvety as it chills.
9. Serve
Just before serving, top with:
- Fresh raspberries or strawberries
- Whipped cream
- Dark chocolate shavings
- Cocoa powder
- Chopped toasted hazelnuts
A tiny pinch of flaky sea salt is also excellent with dark chocolate.
Easy Egg-Free Chocolate Mousse
If you’d rather not use raw eggs, try this simpler version.
Ingredients
- 6 oz (170 g) dark chocolate
- 1½ cups (360 ml) cold heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla
- Pinch of salt
Method
Melt the chocolate and let it cool slightly.
Whip 1 cup of the cream with powdered sugar and vanilla until soft peaks form.
Fold one-third of the whipped cream into the chocolate.
Fold in the remaining cream gently.
Spoon into glasses and refrigerate for 2–3 hours.
This version is especially easy and still produces a wonderfully fluffy mousse.
Dark Chocolate Mousse
Use 70–85% dark chocolate.
Because darker chocolate is less sweet, add 1–2 extra tablespoons sugar to taste.
Serve with lightly sweetened whipped cream and raspberries.
Chocolate Orange Mousse
Add:
- 1 teaspoon finely grated orange zest
- ½ teaspoon orange extract, optional
Use dark chocolate.
The orange gives the mousse a bright, sophisticated flavor.
Chocolate Raspberry Mousse
Spoon a layer of raspberry sauce into each serving glass before adding the mousse.
Chill until set.
Top with fresh raspberries.
The tart fruit cuts beautifully through the richness of the chocolate.
Mocha Chocolate Mousse
Add 1 teaspoon instant espresso powder to the melted chocolate.
The coffee intensifies the chocolate without making the mousse taste strongly of coffee.
Make-Ahead
Chocolate mousse is an excellent make-ahead dessert.
Prepare it up to 24 hours ahead.
Keep covered and refrigerated.
Add fresh berries, whipped cream, and chocolate shavings immediately before serving.
Storage
Keep refrigerated and consume within 2–3 days.
Because the classic version contains raw eggs, use pasteurized eggs if you have concerns about raw egg safety, and keep the mousse properly refrigerated.
The Secret to Perfect Mousse
The most important step is gentle folding.
The whipped cream and egg whites create the air bubbles that give mousse its signature texture. Fold rather than stir, and stop as soon as everything is incorporated.
The result should be rich and intensely chocolatey, yet light enough to melt on your tongue.
