Ingredients
For the pecan clusters
- 2½ cups (275 g) pecan halves
- 1½ cups (300 g) soft caramel candies, unwrapped
- 2 tbsp heavy cream
- Ÿ tsp salt
- 1 tsp vanilla extract
For the chocolate coating
- 2 cups (340 g)Â semi-sweet or milk chocolate chips
- 1 tsp coconut oil or shortening (optional, for smoother dipping)
For finishing
- Âź cup finely chopped pecans
- Flaky sea salt (optional)
- Melted white chocolate (optional, for drizzling)
Instructions
1. Toast the pecans
Preheat your oven to 350°F (175°C).
Spread the pecan halves evenly on a baking sheet.
Toast for approximately 7â10 minutes, stirring once halfway through.
Keep a close eye on them because nuts can burn quickly.
You’ll know they’re ready when they smell deeply nutty and lightly toasted.
Remove them from the oven and let them cool for several minutes.
2. Make the pecan piles
Line a large baking sheet with parchment paper.
Arrange 4â5 pecan halves together for each candy cluster.
Try to overlap the pecans slightly, creating a small base that will hold the caramel.
You should have roughly 24â30 little pecan piles.
3. Melt the caramel
Place the unwrapped caramel candies and heavy cream in a small saucepan.
Heat over low heat, stirring constantly.
Continue until the caramels are completely melted and smooth.
This should take about 5â8 minutes.
Remove from the heat and stir in the vanilla and salt.
4. Add the caramel
Spoon approximately 1â1½ teaspoons of warm caramel onto the center of each pecan cluster.
Don’t worry if the caramel doesn’t look perfectly neat.
It will spread slightly as it cools and bind the pecans together.
Allow the caramel to sit for about 10â15 minutes until it becomes slightly firm.
5. Melt the chocolate
Place the chocolate chips in a microwave-safe bowl.
Microwave in 20â30 second intervals, stirring thoroughly after each interval.
Continue until the chocolate is almost completely melted.
Stir until completely smooth.
If desired, add 1 teaspoon of coconut oil or shortening to make the chocolate thinner and easier to work with.
6. Coat the turtles
Spoon approximately 1 tablespoon of melted chocolate over each caramel-and-pecan cluster.
You can cover the entire top or leave a little caramel and pecan showing around the edges.
For the classic turtle look, don’t completely hide the pecan “legs.”
7. Add the finishing touches
While the chocolate is still melted, sprinkle the tops with:
- Chopped pecans
- A tiny pinch of flaky sea salt
For an elegant finish, drizzle a little melted white chocolate over the top.
8. Chill
Place the baking sheet in the refrigerator for approximately 30â45 minutes, or until the chocolate is completely set.
Once firm, carefully peel the candies away from the parchment paper.

Toast the pecans
Don’t skip this step. Toasting makes the pecans much more flavorful and gives the finished candy a better crunch.
Keep the caramel warm
If the caramel becomes too thick while you’re working, return it to very low heat for a few seconds and stir.
Don’t overheat the chocolate
Chocolate can seize or become grainy if overheated. Gentle, short microwave intervals work best.
Let each layer set slightly
Allowing the caramel to firm before adding the chocolate helps keep the layers distinct.

Dark Chocolate Turtles
Use 60â70% dark chocolate for a less-sweet, more sophisticated flavor.
Sea Salt Caramel Turtles
Use extra flaky sea salt on top. The salty caramel flavor is incredible with dark chocolate.

Use milk chocolate for a sweeter, softer flavor that’s especially popular with kids.
Peanut Turtles
Replace some or all of the pecans with roasted peanuts.
