Crispy Cabbage & Egg Fritters

Golden, crispy on the outside and tender inside, these savory cabbage and egg fritters are an easy, budget-friendly meal or snack. They’re packed with shredded cabbage, herbs, and cheese, then pan-fried until beautifully crisp.Makes: 10–12 fritters
Servings: 4
Prep time: 15 minutes
Cook time: 15–20 minutes
Total time: About 35 minutes

Ingredients

  • 4 cups finely shredded green cabbage
  • 3 large eggs
  • ½ cup (60 g) all-purpose flour
  • ½ cup (50 g) shredded cheddar or mozzarella
  • ¼ cup finely diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill, optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 2–3 tablespoons olive oil or neutral cooking oil, for frying

Optional additions

  • 2 green onions, thinly sliced
  • ¼ teaspoon red pepper flakes
  • ½ cup grated carrot
  • ¼ cup crumbled feta
  • 2 tablespoons grated Parmesan

1. Prepare the cabbage

Finely shred the cabbage.

Place it in a large bowl and sprinkle with ¼ teaspoon salt.

Massage it gently with your hands for about 1 minute.

Let it sit for 5–10 minutes.

Squeeze out as much excess moisture as possible.

This is one of the most important steps for crispy fritters. Too much water will make them soft instead of golden.

2. Make the batter

Place the drained cabbage in a large bowl.

Add:

  • Eggs
  • Flour
  • Cheese
  • Onion
  • Garlic
  • Parsley
  • Dill
  • Remaining salt
  • Black pepper
  • Paprika
  • Garlic powder

Mix thoroughly.

The mixture should be thick enough to hold together when scooped.

If it seems too wet, add another tablespoon of flour.

If it seems too dry, add another beaten egg.

3. Heat the skillet

Heat a large nonstick or cast-iron skillet over medium heat.

Add enough oil to lightly coat the bottom.

Let the oil heat for about 1–2 minutes.

You want it hot enough that a small bit of batter sizzles immediately when added.

4. Form the fritters

Scoop approximately ¼ cup of mixture into the skillet for each fritter.

Flatten each mound with the back of a spoon.

Keep them relatively thin—about ½ inch thick—so they cook through while developing crispy edges.

Don’t overcrowd the pan.

Cook in batches if necessary.

5. Fry until golden

Cook for approximately 3–4 minutes per side.

Don’t flip too early.

Wait until the underside is deeply golden and the fritter feels sturdy enough to turn.

Flip carefully with a spatula.

Cook the second side for another 3–4 minutes.

Add a little more oil between batches if necessary.

6. Drain

Transfer the cooked fritters to a plate lined with paper towels or a wire rack.

Sprinkle lightly with salt while they’re hot.

A wire rack is preferable because it prevents steam from making the bottoms soggy.

Extra-Crispy Version

For especially crispy fritters:

  • Squeeze the cabbage very dry.
  • Use a wide skillet.
  • Don’t overcrowd the pan.
  • Keep the fritters thin.
  • Use medium heat rather than high heat.
  • Let the first side become deeply golden before flipping.

You can also replace 2 tablespoons of flour with 2 tablespoons cornstarch for a crisper crust.

Cheesy Cabbage Fritters

Use ¾ cup shredded cheddar or mozzarella instead of ½ cup.

Add 2 tablespoons Parmesan.

The cheese melts into the cabbage and creates beautifully crispy, browned edges.

Spicy Version

Add:

  • ½ teaspoon chili flakes
  • ½ teaspoon smoked paprika
  • 1 finely chopped jalapeño

Serve with a cool yogurt sauce.

Low-Carb Version

Replace the flour with:

  • ¼ cup almond flour
  • 2 tablespoons grated Parmesan

The fritters will be slightly more delicate, so let them develop a strong crust before flipping.

Air Fryer Method

Preheat the air fryer to 375°F (190°C).

Form the fritters and lightly spray both sides with oil.

Place them in a single layer.

Air fry for approximately 8–10 minutes, flipping halfway through.

Cook until golden and crisp.

Work in batches so air can circulate around the fritters.

Oven Method

Preheat the oven to 425°F (220°C).

Place the fritters on a parchment-lined baking sheet.

Brush or spray both sides lightly with oil.

Bake for 12 minutes.

Flip and bake another 8–10 minutes, until golden and crisp.

For even better browning, place them on a wire rack set over the baking sheet.

Quick Yogurt Dipping Sauce

Mix together:

  • ½ cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped dill
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Black pepper to taste

For a spicy sauce, add a little hot sauce or chili flakes.

Serving Ideas

Serve the fritters with:

  • Fried or poached eggs
  • Greek yogurt sauce
  • Sour cream
  • Avocado
  • Fresh tomato salad
  • Pickles
  • Sliced cucumber
  • Smoked salmon
  • A squeeze of fresh lemon

They’re especially good served hot with a fried egg on top for breakfast or a light dinner.

Storage

Store cooled fritters in an airtight container in the refrigerator for up to 3–4 days.

For the best texture, reheat them in a skillet, air fryer, or 400°F (200°C) oven rather than the microwave.

Freezing

Cool completely and place parchment between the fritters.

Freeze for up to 2 months.

Reheat directly from frozen in a 400°F (200°C) oven or air fryer until hot and crisp.

The crispy-fritter secret

Dry cabbage + thin fritters + a properly heated skillet are the keys.

You want the outside deeply golden and crunchy while the inside stays tender, savory, and full of sweet cabbage flavor.
