Buttery Cheese Flatbreads
Soft, golden flatbreads brushed with butter and loaded with melted cheese. They’re delicious as a quick snack, side dish, or accompaniment to soups and curries.
Ingredients
For the flatbreads
2 cups all-purpose flour
1 tsp baking powder
½ tsp salt
¾ cup plain yogurt
2 tbsp melted butter
2–4 tbsp warm water, as needed
For the cheese topping
1 cup shredded mozzarella
½ cup shredded cheddar
2 tbsp melted butter
1 clove garlic, finely minced
1 tbsp chopped fresh parsley or cilantro
Pinch of chili flakes, optional
Instructions
Make the dough: Mix flour, baking powder, and salt in a bowl. Add yogurt and 1 tablespoon melted butter. Mix until a soft dough forms, adding warm water a little at a time if needed.
Knead: Knead for about 3–4 minutes until smooth. Cover and let rest for 15–20 minutes.
Shape: Divide the dough into 6 portions. Roll each portion into a thin round or oval.
Cook: Heat a dry skillet over medium-high heat. Cook each flatbread for about 1–2 minutes per side, until puffed and golden spots appear.
Add the cheese: Mix the mozzarella and cheddar. Sprinkle cheese over each hot flatbread and return it to the skillet. Cover for 1–2 minutes, until the cheese melts.
Make the butter: Mix melted butter with garlic, parsley or cilantro, and chili flakes.
Finish: Brush the hot cheese flatbreads generously with the garlic butter.
Tips
For extra-soft flatbreads, don’t add too much flour—the dough should remain slightly soft.
Use mozzarella for stretch and cheddar for stronger flavor.
For a crispier finish, place the cheese-topped flatbreads under a hot broiler for 1–2 minutes.
Serve warm with garlic yogurt sauce, marinara, or alongside grilled chicken or beef.
