Creamy Dessert with a Red Berry Swirl
A silky, creamy no-bake dessert layered with a vibrant raspberry-strawberry swirl. It’s easy to make, looks beautiful in individual glasses, and requires no oven.
Ingredients
Creamy layer
1 cup heavy whipping cream, chilled
8 oz (225 g) cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
½ cup Greek yogurt
Red berry swirl
1 cup strawberries, chopped
½ cup raspberries
2 tbsp sugar
1 tsp lemon juice
Optional
Crushed graham crackers or digestive biscuits
Fresh berries and mint, for decoration
Instructions
Make the berry sauce: Add strawberries, raspberries, sugar, and lemon juice to a small saucepan. Cook over medium heat for 5–7 minutes, stirring occasionally, until the berries break down and become syrupy. Mash lightly and let cool completely.
Make the cream: Beat the softened cream cheese, powdered sugar, and vanilla until smooth. Add Greek yogurt and mix until combined.
In a separate bowl, whip the chilled heavy cream until soft peaks form. Gently fold it into the cream cheese mixture.
Layer: Add a spoonful of crushed biscuits to the bottom of dessert glasses if using. Add some of the cream mixture, followed by a spoonful of cooled berry sauce.
Add another layer of cream. Use a skewer or toothpick to gently swirl the berry sauce through the top.
Chill: Refrigerate for at least 2 hours before serving.
Garnish with fresh strawberries, raspberries, or mint.
Tip
For a dramatic swirl, don’t fully mix the berry sauce into the cream. Add small spoonfuls and gently drag a toothpick through the surface to create ribbons of red throughout the dessert.
