Ingredients
For the Weetabix base
- 2 Weetabix biscuits
- ½ cup (120 ml) milk of your choice
- ½ tsp vanilla extract
- ½ tsp honey or maple syrup (optional)
For the creamy yogurt layer
- ½ cup (120 g) Greek yogurt
- 2 tbsp light cream cheese
- 1–2 tsp honey or maple syrup, to taste
- ½ tsp vanilla extract
- 1–2 tsp fresh lemon juice (optional)
For the blueberry topping
- ½ cup (75 g) fresh or frozen blueberries
- 1 tsp honey or maple syrup
- 1 tsp lemon juice
- 1 tbsp water
Optional toppings
- Fresh blueberries
- Granola
- Chopped almonds
- Coconut flakes
- Chia seeds
- A little white chocolate
Instructions
1. Make the blueberry topping
Add the blueberries, honey, lemon juice, and water to a small saucepan.
Cook over medium-low heat for 3–5 minutes, stirring occasionally.
The blueberries will begin to soften and release their juices.
For a smoother topping, gently mash some of the berries with the back of a spoon.
You don’t need to completely crush them—leaving some whole berries gives the topping a lovely texture.
Remove from the heat and let it cool.
2. Prepare the Weetabix base
Break the two Weetabix biscuits into a jar, container, or small bowl.
Pour the milk over them.
Add vanilla and honey if using.
Use a spoon to crush and mix everything together until you have a thick, soft mixture.
Press it gently into an even layer on the bottom.
3. Make the creamy layer
In a separate bowl, combine the Greek yogurt, cream cheese, honey, vanilla, and lemon juice.
Mix until completely smooth and creamy.
Taste it and adjust the sweetness if necessary.
The lemon juice is optional, but it gives the yogurt layer a delicious cheesecake-like flavor.
4. Build the layers
Spoon the yogurt mixture over the softened Weetabix.
Spread it gently into an even layer.
Add the cooled blueberry mixture on top.
If you want a layered appearance, keep the blueberry topping mostly on the surface rather than stirring it into the yogurt.
5. Cover and refrigerate
Cover the container and refrigerate for at least 6 hours, preferably overnight.
During this time, the Weetabix absorbs the milk and becomes soft and cake-like.

6. Add toppings and serve
In the morning, add fresh blueberries and any toppings you like.
