Ingredients
For the cake
- 1 cup (120 g) all-purpose flour
- ½ cup (50 g) unsweetened applesauce
- 2 large eggs
- ⅓ cup (65 g) granulated sugar
- ¼ cup (60 g) plain Greek yogurt, low-fat
- ¼ cup (60 ml) skim or low-fat milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp baking soda

Instructions
1. Prepare the oven
Preheat your oven to 350°F (175°C).
Lightly spray an 8-inch (20 cm) round cake pan with cooking spray and line the bottom with parchment paper.
2. Combine the dry ingredients
In a medium bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon, if using
Set aside.
3. Mix the wet ingredients
In a large bowl, whisk the eggs and sugar for about 1–2 minutes, until slightly lighter and well combined.
Add the applesauce, Greek yogurt, milk, vanilla, and lemon juice.
Whisk until smooth.
4. Combine the batter
Gradually add the dry ingredients to the wet ingredients.
Use a spatula or whisk to mix until just combined.
Don’t overmix. A few tiny lumps are perfectly fine.
The batter should be smooth and fairly light.
5. Bake
Pour the batter into the prepared cake pan.
Spread it evenly.
Bake for approximately 25–30 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
6. Cool
Let the cake cool in the pan for about 10 minutes.
Then remove it from the pan and transfer it to a wire rack.
Allow it to cool completely before adding toppings.

Spread a thin layer over the cooled cake.
