Homemade Crepes — Thin, Soft & Perfect Every Time

These homemade crepes are delicate, tender, and lightly golden around the edges. The batter is simple, comes together in minutes, and can be used for both sweet and savory crepes.

Ingredients

For the crepe batter

  • 1½ cups (190 g) all-purpose flour
  • 2 large eggs
  • 1¾ cups (420 ml) whole milk
  • ¼ cup (60 ml) water
  • 2 tbsp unsalted butter, melted
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt

For cooking

  • 1–2 tbsp butter or neutral oil

Instructions

1. Prepare the batter

Add the eggs and milk to a large mixing bowl.

Whisk until well combined.

Add the melted butter, water, vanilla, sugar, and salt.

Whisk again until smooth.

2. Add the flour

Gradually add the flour while whisking continuously.

Keep whisking until you have a smooth, thin batter.

The batter should be much thinner than pancake batter, almost like heavy cream.

If it seems too thick, add another tablespoon or two of milk.

3. Strain the batter

For especially smooth crepes, pour the batter through a fine-mesh strainer into another bowl.

This removes any small lumps of flour.

It’s an optional step, but it makes a noticeable difference.

4. Rest the batter

Cover the bowl and let the batter rest for 20–30 minutes at room temperature.

This allows the flour to fully hydrate and helps prevent the crepes from becoming tough.

You can also refrigerate the batter overnight and cook the crepes the next morning.

🥞 Cooking the Crepes

5. Heat the pan

Place an 8–10 inch nonstick skillet over medium heat.

Allow it to heat for about 1–2 minutes.

Lightly brush the surface with butter.

You don’t want a lot of butter—just enough to create a very thin coating.

6. Add the batter

Give the batter a quick stir.

Pour approximately ¼ cup of batter into the center of the hot pan.

Immediately lift and tilt the pan in a circular motion, allowing the batter to spread into a thin, even layer.

Work quickly because the batter begins setting almost immediately.

7. Cook the first side

Cook for approximately 45–60 seconds.

You’ll know it’s ready when:

  • The surface looks set.
  • The edges begin to lift away from the pan.
  • The underside is lightly golden.

8. Flip

Slide a thin spatula underneath the crepe.

Gently flip it.

Cook the second side for about 15–30 seconds.

The second side usually cooks much faster.

Transfer the finished crepe to a plate.

9. Repeat

Continue with the remaining batter.

You may only need to lightly butter the pan every few crepes.

Stack the cooked crepes on a plate.

If you want them especially soft, cover the stack loosely with a clean kitchen towel.

Classic Strawberry & Cream

Fill with:

  • Whipped cream
  • Sliced strawberries
  • A little powdered sugar

Fold into quarters and drizzle with chocolate sauce.

Nutella & Banana

Spread warm chocolate-hazelnut spread over the crepe.

Add sliced banana and fold.

Finish with powdered sugar.

Lemon & Sugar

Sprinkle the warm crepe with sugar and squeeze fresh lemon juice over it.

Fold and serve immediately.

Blueberry Cheesecake

Fill with sweetened cream cheese and fresh blueberries.

Add a little lemon zest for brightness.

Apple Cinnamon

Cook sliced apples with butter, cinnamon, and a little brown sugar.

Spoon the warm apples into the crepe and fold.

🧀 Savory Crepe Ideas

For savory crepes, simply leave out the sugar and vanilla.

Ham & Cheese

Fill with sliced ham and shredded Gruyère or cheddar.

Fold and cook briefly until the cheese melts.

Spinach & Feta

Fill with sautéed spinach, feta cheese, and a little black pepper.

Chicken & Mushroom

Combine cooked chicken with sautéed mushrooms in a creamy sauce.

Spoon into the crepe and fold.

Egg & Cheese

Add scrambled or fried eggs with cheddar and cooked bacon.

Perfect for breakfast.

⭐ Tips for Perfect Crepes

Keep the batter thin

Thin batter creates thin, delicate crepes. If your first crepe looks too thick, add a splash of milk to the batter.

Don’t make the pan too hot

A very hot pan will cook the batter before you can spread it properly.

Medium heat is usually ideal.

Your first crepe may look imperfect

That’s completely normal. Use the first one to adjust the pan temperature and batter consistency.

Don’t over-butter the pan

Too much butter can cause the batter to slide around instead of forming an even layer.

Stack the crepes

Stacking them while warm keeps them soft and flexible.

🧊 Make-Ahead & Storage

You can make the crepes 1–2 days ahead.

Allow them to cool completely, then stack them with parchment paper between the layers and store them in an airtight container in the refrigerator.

To reheat, warm each crepe in a skillet for about 10–20 seconds per side.

You can also freeze them for up to 2 months. Separate each crepe with parchment paper before freezing.

✨ My favorite combination

Try a warm crepe filled with Nutella, sliced strawberries, and banana, then add a little whipped cream and powdered sugar on top. It’s simple, but absolutely delicious.
