With just banana, chia seeds, almond milk, and oats, you can make a creamy, naturally sweet overnight oat pudding. It’s easy to prepare ahead and makes a filling breakfast or snack.Servings: 1 large or 2 small
Prep time: 5 minutes
Chilling time: 4 hours or overnight
🛒 Ingredients
- 1 ripe banana
- ½ cup (45 g) rolled oats
- 1 tbsp chia seeds
- ¾ cup (180 ml) unsweetened almond milk
- Pinch of cinnamon, optional
- ½ tsp vanilla extract, optional
Optional toppings
- Sliced banana
- Almond butter
- Chopped almonds
- Berries
- A drizzle of honey or maple syrup
👩🍳 Instructions
1. Mash the banana
Place the banana in a bowl or jar.
Mash it thoroughly with a fork until mostly smooth.
The riper the banana, the sweeter and creamier your oats will be.
2. Add the remaining ingredients
Add the oats, chia seeds, and almond milk.
If using, add cinnamon and vanilla.
Stir everything together very well, making sure the chia seeds aren’t clumped together.
3. Let it thicken
Cover the bowl or jar.
Refrigerate for at least 4 hours, preferably overnight.
The oats will soften and the chia seeds will absorb the almond milk, creating a thick, pudding-like consistency.
4. Stir before serving
In the morning, give everything a good stir.
If it’s too thick, add 1–2 tablespoons almond milk until you reach your preferred consistency.
5. Add toppings
Top with sliced banana, berries, chopped almonds, or a spoonful of almond butter.
🔥 Warm Version
If you prefer hot oatmeal, combine the mashed banana, oats, almond milk, and cinnamon in a saucepan.
Cook over medium-low heat for 5–7 minutes, stirring frequently.
Remove from the heat and stir in the chia seeds.
Let stand for 3–5 minutes to thicken.
Top with banana and almond butter.
⭐ Simple ratio to remember
1 banana + ½ cup oats + 1 tbsp chia seeds + ¾ cup almond milk
That’s all you need for a naturally sweet, creamy breakfast.
