🛒 Ingredients
- 1½ cups (180 g) gluten-free all-purpose flour blend — preferably one containing xanthan gum
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg
- 1¼ cups (300 ml) milk or unsweetened almond milk
- 2 tbsp melted butter or neutral oil
- 1 tsp vanilla extract
- 1 tsp lemon juice or apple cider vinegar

1. Mix the dry ingredients
In a large bowl, whisk together:
- Gluten-free flour
- Sugar
- Baking powder
- Baking soda
- Salt
- Cinnamon, if using
Mix well so the leavening agents are evenly distributed.
2. Mix the wet ingredients
In a separate bowl, whisk together the egg, milk, melted butter, vanilla, and lemon juice.

3. Combine

7. Cook the first side
Cook for about 2–3 minutes.
You’ll know it’s ready to flip when:
- Bubbles appear across the surface.
- The edges look slightly dry.
- The bottom is golden brown.
8. Flip
Carefully flip the pancake with a spatula.
Cook the second side for another 1–2 minutes, until golden and cooked through.
