Air-Fried Crispy Cauliflower

🥦 Air-Fried Crispy Cauliflower

This air-fried crispy cauliflower is crunchy and golden on the outside, tender inside, and packed with savory garlic and spices. It makes a fantastic side dish, snack, appetizer, or meatless main course. The key is to keep the cauliflower dry, lightly coated, and uncrowded in the air fryer so it actually becomes crispy instead of steaming.

Serves: 4
Prep time: 15 minutes
Marinating/seasoning time: 10 minutes
Air-frying time: 15–20 minutes
Total time: About 45 minutes

Ingredients

For the cauliflower

  • 1 large head cauliflower, approximately 700–800 g
  • 2 tablespoons olive oil
  • ½ cup (60 g) all-purpose flour
  • ½ cup (55 g) cornstarch
  • ½ teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon sweet paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • ½ teaspoon chili powder, optional
  • ¼ teaspoon cayenne pepper, optional
  • ½ cup (120 ml) cold water

Optional finishing seasonings

  • 1 tablespoon grated Parmesan
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon chili flakes
  • Fresh lemon juice

Step 1: Prepare the Cauliflower

Remove the leaves from the cauliflower and cut away the thick stem.

Separate the cauliflower into medium-sized florets.

Try to keep the pieces relatively similar in size so they cook evenly.

Wash the cauliflower thoroughly and then dry it extremely well.

You can use a clean kitchen towel or paper towels.

Why drying matters

Water on the cauliflower creates steam.

Steam makes the coating softer instead of crispy.

For the crispiest result, the cauliflower should be as dry as possible before coating.

Step 2: Make the Crispy Batter

In a large bowl, combine:

  • ½ cup flour
  • ½ cup cornstarch
  • ½ teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon sweet paprika
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • Chili powder and cayenne, if using

Whisk everything together.

Slowly add ½ cup cold water, whisking as you pour.

You want a batter that is:

  • Smooth
  • Thick enough to coat the cauliflower
  • Not so thick that it forms a heavy layer

It should resemble a slightly thick pancake batter.

If it’s too thick, add 1 tablespoon water at a time.

If it’s too thin, add a little cornstarch.

Step 3: Coat the Cauliflower

Place the dry cauliflower florets into the batter.

Toss gently until every piece is coated.

You don’t want huge amounts of batter clinging to the cauliflower.

Let excess batter drip back into the bowl.

Extra-crispy trick

After dipping each floret into the batter, lightly sprinkle it with a little extra cornstarch.

You don’t need much.

This creates additional rough edges that become beautifully crisp in the air fryer.

Step 4: Preheat the Air Fryer

Preheat your air fryer to:

200°C / 400°F

for approximately 3–5 minutes.

If your air fryer doesn’t require preheating, you can still preheat it for better browning.

Lightly spray the air-fryer basket with cooking spray.

Step 5: Arrange the Cauliflower

Place the coated cauliflower into the basket in a single layer.

Leave a little space between the pieces.

Don’t pile them on top of each other.

This is extremely important.

If the cauliflower is crowded, the hot air can’t circulate properly.

Instead of crisping, the cauliflower will steam.

If necessary, cook in two batches.

Step 6: Spray With Oil

Lightly spray the tops of the cauliflower with olive oil or cooking spray.

You don’t need to soak them in oil.

A light coating is enough to encourage browning and crisping.

Step 7: Air Fry

Air fry at:

200°C / 400°F for 15–20 minutes.

After approximately 8–10 minutes, open the basket.

Shake it gently or turn the cauliflower pieces with tongs.

Lightly spray any dry-looking areas with oil.

Return to the air fryer.

Continue cooking until the cauliflower is:

  • Deep golden brown
  • Crisp around the edges
  • Tender inside

The exact cooking time will vary depending on the size of the florets and your air fryer.

Step 8: Make It Extra Crispy

For an even crunchier finish, increase the temperature to:

205°C / 410°F

for the final 2–3 minutes.

Watch carefully because the spices and batter can brown quickly.

Step 9: Finish With Lemon

Immediately after removing the cauliflower, squeeze a little fresh lemon juice over it.

Don’t add too much.

A small amount of acidity brightens the spices and balances the richness.

Sprinkle with:

  • Fresh parsley
  • Chili flakes
  • Parmesan, if desired

Serve immediately while hot and crispy.

🌶️ Spicy Version

For seriously flavorful spicy cauliflower, add:

  • 1 teaspoon chili powder
  • ½ teaspoon cayenne
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder

After air frying, toss the cauliflower with a little hot sauce.

You can also drizzle it with spicy honey for a sweet-and-spicy version.

🧄 Garlic Parmesan Version

For a garlic Parmesan variation, increase the garlic powder to 1½ teaspoons.

Once the cauliflower is cooked, immediately toss it with:

  • 2 tablespoons finely grated Parmesan
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped parsley
  • A squeeze of lemon

The Parmesan will stick to the hot, crispy coating.

🥢 Asian-Style Crispy Cauliflower

For an Asian-inspired version, keep the basic coating but add:

  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon sesame seeds

After cooking, toss lightly with a sauce made from:

  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • A little chili sauce

Important: Add the sauce immediately before serving so the cauliflower doesn’t become soggy.

🥛 Creamy Dipping Sauce

A cool dipping sauce is excellent with crispy cauliflower.

Combine:

  • ½ cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • Black pepper
  • A little chopped parsley

Mix until smooth.

Refrigerate for 15–20 minutes before serving.

🌿 Easy Ranch-Style Dip

Mix:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • Salt to taste

This makes a creamy dip that pairs beautifully with the crunchy cauliflower.

Tips for Perfect Air-Fried Cauliflower

Don’t make the florets too large

Large florets can become browned outside while remaining firm inside.

Medium-sized pieces cook more evenly.

Dry the cauliflower thoroughly

This is one of the biggest secrets to crispiness.

Use cornstarch

Cornstarch helps create a lighter, crunchier coating.

Don’t overcrowd the basket

Cook in batches if necessary.

Air needs to circulate around every piece.

Turn halfway through

This helps the coating brown evenly.

Eat immediately

Air-fried cauliflower is at its crispiest immediately after cooking.

The longer it sits, the softer the coating becomes.

How to Reheat Leftovers

If you have leftovers, don’t microwave them if you want them crispy.

Instead, air fry at:

190°C / 375°F for 4–6 minutes.

Shake the basket halfway through.

They should become noticeably crisp again.

Serving Ideas

Serve the crispy cauliflower as:

  • An appetizer with dipping sauce
  • A side dish with grilled chicken
  • A topping for rice bowls
  • A filling for wraps
  • A vegetarian taco filling
  • A snack with ranch dip
  • A meatless main course with rice and salad

For a complete meal, serve it over steamed rice with cucumber, carrots, green onions, and a drizzle of spicy mayo.

⭐ Best Crispy Cauliflower Formula

For the crispiest possible result, remember these five things:

Dry cauliflower → cornstarch → single layer → high heat → serve immediately.

That combination gives you cauliflower that’s golden and crunchy outside, tender inside, and full of smoky garlic flavor without needing to deep-fry it.
