Instructions
1. Prepare the cucumber
Wash and dry the cucumber.
Using a sharp knife or mandoline, slice it very thinly.
You want delicate slices rather than thick, crunchy chunks.
Place the cucumber slices on a layer of paper towels.
Sprinkle very lightly with salt and let them sit for about 10–15 minutes.
This draws out excess moisture and prevents your sandwiches from becoming soggy.
Pat the cucumber thoroughly dry with additional paper towels.
2. Make the cream cheese spread
In a bowl, combine the softened cream cheese and butter.
Beat or stir until smooth and creamy.
