Zero-Carb Flour-Free Flatbread

This flour-free flatbread uses eggs, cheese, and a little psyllium husk to create a flexible, savory bread substitute without wheat or traditional flour. It’s soft enough for wraps but sturdy enough for sandwiches, pizza-style toppings, or dipping.
Note: “Zero carb” depends on the exact ingredients and serving size. Eggs and cheese contain very small amounts of carbohydrates, while psyllium contributes fiber. For a truly zero-net-carb version, check the nutrition labels of your specific ingredients.
Ingredients
- 4 large eggs
- 1 cup (100 g) shredded mozzarella cheese
- 2 tbsp cream cheese, softened
- 1 tbsp psyllium husk powder
- ¼ tsp salt
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
- 1 tbsp olive oil, for cooking
Optional flavor additions
- ½ tsp Italian seasoning
- 1 tbsp grated Parmesan
- Pinch of chili flakes
- 1 tbsp chopped fresh parsley
- ½ tsp smoked paprika
Instructions
1. Blend the batter
Add the eggs, mozzarella, cream cheese, psyllium husk powder, salt, garlic powder, onion powder, and black pepper to a blender.
Blend for about 20–30 seconds, until smooth.
The batter should look similar to a thick pancake batter.
Let it sit for 3–5 minutes.
The psyllium will absorb some of the liquid and thicken the mixture.
2. Check the consistency
After resting, stir the batter.
If it has become extremely thick, add 1 tablespoon of water and mix again.
You want it pourable but noticeably thicker than ordinary beaten eggs.
3. Heat the pan
Place a large nonstick skillet over medium-low heat.
Lightly brush it with olive oil.
Avoid high heat—the cheese can brown quickly before the flatbread has had time to set.
4. Cook the first flatbread
Pour approximately ¼ of the batter into the center of the skillet.
Immediately spread it into a thin circle using the back of a spoon or a silicone spatula.
Aim for approximately 5–6 inches (13–15 cm) across.
The thinner you spread it, the more flexible and wrap-like it will become.
5. Cook
Cook for approximately 2–3 minutes.
The surface should become mostly set, and the underside should be lightly golden.
Carefully loosen the edges with a spatula.
6. Flip
Slide a wide spatula underneath the flatbread and flip it gently.
Cook for another 1–2 minutes.
The second side should be lightly browned and completely set.
Transfer to a plate.
7. Repeat
Lightly oil the skillet again if necessary.
Repeat with the remaining batter.
Stack the finished flatbreads on a plate and cover them loosely with a clean kitchen towel.
The trapped warmth will help keep them soft.
For Extra-Flexible Flatbread
If you’re using these as wraps, don’t cook them until deeply browned.
Remove them as soon as they’re set and lightly golden.
Overcooking will make them more crisp and less flexible.
If a flatbread becomes too firm, place it between two slightly damp paper towels and microwave for about 10–15 seconds to soften it.
For Crispy Flatbread
For a cracker-like or pizza-base texture, spread the batter thinner and cook a little longer.
After cooking in the skillet, transfer the flatbread to a baking sheet and bake at 350°F (175°C) for about 5–8 minutes, watching closely.
It should become noticeably crisp around the edges.
Flavor Variations
Garlic & Herb
Add:
- ½ tsp Italian seasoning
- ½ tsp garlic powder
- 1 tbsp Parmesan
- Fresh parsley
Excellent with grilled chicken or as a side for soup.
Spicy Flatbread
Add:
- ¼ tsp cayenne
- ½ tsp smoked paprika
- Pinch of chili flakes
Serve with a creamy dipping sauce.
Cheesy Parmesan
Replace ¼ cup of the mozzarella with grated Parmesan.
The finished flatbread will have a stronger, nuttier cheese flavor and crisp more easily.
Pizza Flatbread
Cook the flatbread until just set.
Top with a thin layer of pizza sauce, mozzarella, pepperoni, and oregano.
Bake at 400°F (200°C) for approximately 5–7 minutes, until the cheese melts.

Tips for Success
Use a good nonstick pan. The cheese can stick to ordinary pans.
Keep the heat moderate. Medium-low gives the flatbread time to set without burning the cheese.
Don’t skip the resting time. Psyllium needs a few minutes to absorb moisture and improve the structure.
Spread evenly. A thin, consistent layer cooks much more evenly than a thick center with thin edges.
Flip carefully. If the flatbread is still wet and floppy when you try to flip it, give it another 30–60 seconds.
Storage
Cool the flatbreads completely, then stack them with parchment between each one.
Store in an airtight container in the refrigerator for 3–4 days.
Reheat briefly in a skillet or microwave.
They can also be frozen for approximately 1–2 months. Separate them with parchment before freezing so you can remove individual flatbreads as needed.
Simple Serving Idea
Fill a warm flatbread with seasoned grilled chicken, shredded lettuce, cucumber, avocado, cheese, and garlic-yogurt sauce and roll it tightly for an easy flour-free wrap.
