Zero-Carb Bread in a Mug — 90 Seconds
Prep time: 1 minute
Cook time: 90 seconds
Total time: About 2½ minutes
Servings: 1 mug bread
This quick microwave bread is soft, fluffy, and ideal when you want a single serving without turning on the oven. It uses eggs and cheese for structure, with a little psyllium husk to give it a more bread-like texture.
Note: “Zero carb” is a recipe-style description rather than a guarantee. Eggs and dairy can contain small amounts of carbohydrate, and psyllium contains fiber. Check your specific ingredient labels if you’re tracking carbohydrates closely.
Ingredients
- 1 large egg
- 2 tbsp shredded mozzarella
- 1 tbsp cream cheese, softened
- 1 tbsp almond flour, optional
- ½ tsp psyllium husk powder
- ¼ tsp baking powder
- ⅛ tsp salt
- ⅛ tsp garlic powder
- 1 tsp melted butter or olive oil
Optional additions
- Pinch of black pepper
- ¼ tsp Italian seasoning
- 1 tbsp grated Parmesan
- Pinch of chili flakes
- Chopped fresh herbs
Instructions
1. Prepare the mug
Use a microwave-safe mug or small ramekin with a capacity of at least 10–12 oz (300–350 ml).
Lightly grease the inside with butter or oil.
This makes the finished bread much easier to remove.
2. Mix the ingredients
Crack the egg directly into the mug.
Add the cream cheese, shredded mozzarella, psyllium husk, baking powder, salt, garlic powder, and almond flour if using.
Whisk vigorously with a fork for 30–45 seconds, making sure there are no large pieces of cream cheese remaining.
Stir in the melted butter or olive oil.
The mixture should be smooth and fairly thick.
3. Let it sit briefly
Allow the mixture to stand for approximately 30 seconds.
This gives the psyllium a moment to absorb some moisture and helps the bread hold together.
4. Microwave
Place the mug in the microwave.
Cook on high for approximately 90 seconds.
The exact time can vary depending on your microwave and the shape of your mug.
The bread should look puffed and completely set in the center.
If the center is still wet, microwave in additional 10–15 second intervals until cooked through.
Avoid significantly overcooking it, as the egg can become rubbery.
5. Rest
Let the mug bread stand for 30–60 seconds after microwaving.
Run a butter knife around the edges.
Turn the mug upside down over a plate and gently shake or tap to release the bread.
6. Slice and serve
Slice the bread horizontally into two pieces.
For a toasted texture, place the slices in a toaster, toaster oven, or dry skillet for a minute or two.
It becomes much more bread-like once lightly toasted.
Savory Garlic Version
For a garlic-bread flavor, add:
- ¼ tsp garlic powder
- ¼ tsp Italian seasoning
- 1 tbsp Parmesan
After cooking, brush the top with a little melted butter and sprinkle with parsley.
Breakfast Version
Leave out the garlic and herbs.
Add a pinch of black pepper and serve the warm bread with:
- Fried egg
- Cheese
- Turkey
- Avocado
- Bacon
- Tomato
You can also split the mug bread and use it as a breakfast sandwich.
Tips for Better Mug Bread
Whisk thoroughly. A well-mixed egg produces a more even texture.
Don’t overfill the mug. The mixture can rise significantly while microwaving.
Use a wide mug. A wider, shallow shape gives you slices that resemble small pieces of bread rather than a tall cake.
Toast it afterward. This is the easiest way to improve the texture and remove some of the soft, eggy quality common to microwave breads.
Adjust the cooking time. Microwaves vary considerably. Start with 90 seconds, then add short intervals if necessary.
Storage
This recipe is best eaten immediately.
If you have leftovers, refrigerate the cooled bread in an airtight container for up to 2 days.
Reheat briefly and toast before serving.
Quick Formula
1 egg + cheese + psyllium + baking powder → mix → microwave 90 seconds → slice → toast.
That’s it—you can have a warm, single-serving bread substitute in just a couple of minutes
