Slow Cooker Garlic Butter Steak Bites with Potatoes
Tender beef bites, creamy potatoes, plenty of garlic, and rich butter make this an easy, hearty slow-cooker dinner. Similar versions use beef stew meat or sirloin, baby potatoes, garlic, butter, and simple seasonings.
Ingredients
- 2 pounds beef stew meat or sirloin steak, cut into bite-size pieces
- 1½ pounds baby Yukon Gold or yellow potatoes
- 5 tablespoons unsalted butter, cut into pieces
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon steak seasoning
- ½ teaspoon black pepper
- ½ teaspoon salt, or to taste
- ¼ cup beef broth
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley, for serving
Instructions
1. Prepare the beef and potatoes
Pat the beef dry with paper towels and cut it into evenly sized pieces. Wash the potatoes well. Leave small potatoes whole; halve or quarter larger ones so they cook evenly.
2. Season everything
Season the beef with the garlic powder, onion powder, steak seasoning, black pepper, and salt. Toss the potatoes with a little of the seasoning as well.
3. Optional: Brown the beef
For deeper flavor, heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches for about 1–2 minutes per side. You don’t need to cook it through—the slow cooker will finish the job. Searing is optional.
4. Layer the slow cooker
Place the potatoes in the bottom of the slow cooker. Arrange the seasoned beef over the potatoes.
5. Add the garlic butter
Scatter the minced garlic over the beef and potatoes. Pour in the beef broth, then distribute the butter pieces evenly over the top.
6. Slow-cook
Cover and cook on LOW for about 5–7 hours, or until the beef is tender and the potatoes are completely cooked. Cooking time varies according to the size and cut of the beef. Similar recipes use roughly 4–6 hours on high or longer on low.
7. Finish and serve
Gently stir everything together so the melted garlic butter coats the beef and potatoes. Sprinkle with fresh parsley and serve hot.
