SLOW COOKER CABBAGE AND ONION SOUP

A simple, comforting soup made with tender cabbage, sweet onions, savory broth, and a few everyday seasonings. It is inexpensive, easy to prepare, and perfect for a cozy meal.

Ingredients

  • 1 medium head green cabbage, chopped
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce, optional
  • 1 tablespoon tomato paste, optional
  • 2 medium carrots, sliced, optional
  • 1–2 tablespoons chopped fresh parsley for serving

1. Prepare the Vegetables

Wash the cabbage and remove the tough outer leaves. Cut it into bite-sized pieces. Slice the onions and carrots, if using, and mince the garlic.

2. Add Everything to the Slow Cooker

Place the cabbage, onions, garlic, carrots, broth, butter or olive oil, salt, pepper, thyme, parsley, and bay leaf into the slow cooker. Add Worcestershire sauce and tomato paste if you want a deeper, richer flavor.

Give everything a gentle stir so the ingredients are evenly distributed.

3. Slow Cook

Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours. The soup is ready when the cabbage and onions are very tender and the flavors have blended together.

Helpful Tips

For a richer soup, sauté the onions and garlic in butter for a few minutes before adding them to the slow cooker. You can also add diced potatoes, carrots, celery, or cooked beans to make the soup more substantial.

If you prefer a meaty version, cooked sausage, shredded chicken, or small pieces of cooked beef can be added toward the end of cooking.

Storage
