3-INGREDIENT CANNED CORNED BEEF POTATO BAKE
Ingredients
- 1 can (12 oz) canned corned beef
- 4–5 medium potatoes
- 1 medium onion
1. Prepare the Potatoes
Peel the potatoes if desired, then slice them thinly and evenly. Thin slices cook more quickly and become tender throughout the bake.
2. Prepare the Onion and Corned Beef
Slice the onion thinly. Cut or crumble the canned corned beef into small pieces so it can spread evenly throughout the dish.
3. Layer Everything
Lightly grease a baking dish. Arrange a layer of sliced potatoes on the bottom, followed by some onion and pieces of corned beef. Continue layering until all the ingredients are used, finishing with corned beef and onion on top.
4. Bake
Cover the dish tightly with foil and bake at 375°F (190°C) for about 45–55 minutes, or until the potatoes are tender when pierced with a fork.
Remove the foil during the final 10–15 minutes to allow the top to brown slightly.
5. Let It Rest
Allow the bake to rest for about 5 minutes before serving. This gives the potatoes and corned beef time to settle and makes the dish easier to portion.
Helpful Tips
Because canned corned beef is already quite salty, you may not need additional salt. If you want a little extra flavor, black pepper, garlic powder, or dried herbs can be added, although the basic recipe works with just the three ingredients.
For more even cooking, avoid cutting the potatoes into thick slices. If your potatoes are particularly large or firm, they may need a little additional baking time.
Final Result
The potatoes become tender and absorb the savory flavor of the corned beef and onions, creating an inexpensive, hearty casserole with very little preparation.
