Creamy 4-Ingredient Chicken Bake
Ingredients
-
2 lb (900 g) boneless, skinless chicken breasts, cut into bite-size pieces
-
1 can (10.5 oz / 298 g) cream of chicken soup
-
1 cup milk
-
1 cup shredded cheddar cheese
-
1 teaspoon garlic powder
-
Salt and black pepper, to taste
-
A little butter or cooking spray for the baking dish
Instructions
-
Preheat the oven to 375°F (190°C).
-
Prepare the chicken.
Cut the raw chicken breasts into fairly small, even-sized pieces. Try to keep the pieces similar in size so they cook at the same rate. Pat them dry with paper towels if they’re particularly wet. -
Prepare your baking dish.
Lightly grease a 9 × 13-inch baking dish with butter or cooking spray. -
Add the chicken.
Spread the diced raw chicken breast evenly across the bottom of the baking dish. Season lightly with salt and black pepper. -
Make the creamy sauce.
In a medium bowl, combine:-
Cream of chicken soup
-
1 cup milk
-
1 teaspoon garlic powder
Whisk until the mixture is reasonably smooth. It doesn’t have to be completely lump-free.
-
-
Pour over the chicken.
Pour the cream mixture evenly over the raw chicken. Use a spoon or spatula to gently spread it around so that most of the chicken is coated. -
Cover the dish.
Cover tightly with aluminum foil. This helps keep the chicken moist while it cooks. -
Bake.
Place the covered dish in the preheated oven and bake for approximately 30–35 minutes.Cooking time can vary depending on how large your chicken pieces are. If your pieces are larger, they may need additional time.
-
Check the chicken.
Remove the foil carefully—the steam will be hot. Check the thickest pieces with an instant-read thermometer. The chicken should reach 165°F (74°C) in the center. -
Add the cheese.
Once the chicken is cooked through, sprinkle 1 cup shredded cheddar cheese evenly over the top. -
Finish uncovered.
Return the dish to the oven, uncovered, for about 5–10 minutes, until the cheese has melted and the sauce is bubbling around the edges. -
Rest before serving.
Let the casserole sit for about 5 minutes before serving. The sauce will thicken slightly as it cools.
What to serve with it
This creamy chicken is especially good over:
-
White or brown rice
-
Mashed potatoes
-
Egg noodles
-
Pasta
-
Steamed broccoli
-
Green beans
-
Dinner rolls or crusty bread
Easy variations
For a little more flavor, you can add one or more of these if you have them:
-
½ teaspoon onion powder
-
½ teaspoon paprika
-
Sliced mushrooms
-
Frozen peas
-
Chopped broccoli
-
Cooked bacon
-
Parmesan cheese
-
A handful of crispy fried onions on top
Important: Because you’re starting with raw chicken, don’t rely on the appearance of the chicken alone. Make sure the thickest pieces reach 165°F (74°C) before eating.
